A hearty and convenient frozen beef roast recipe cooked perfectly in an Instant Pot. This method uses pressure cooking for tender, flavorful meat straight from the freezer, accompanied by a rich homemade gravy made from the roast drippings. Ideal for a comforting family meal with minimal prep time.

Ingredients

Beef Roast

  • 3-4 lbs beef roast
  • 1 tbsp kosher salt
  • 1/4 tsp freshly-ground pepper
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary

Vegetables and Aromatics

  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 2 carrots
  • 2 celery sticks

Liquids and Broth

  • 1 cup broth
  • 3 c roast drippings

Gravy Ingredients

  • 3-4 tablespoons flour (can use gluten free)
  • 1 cup cold water
  • Salt and pepper to taste

Instructions

  1. Prepare the roast: Rub the beef roast evenly with kosher salt and freshly ground pepper. Place the roast in the Instant Pot pressure cooker. Add sliced onions, minced garlic, fresh thyme, rosemary, and one cup of broth around the meat to build flavor and moisture.
  2. Pressure cook the roast: For a thawed 3-5 pound roast, set the Instant Pot to cook on high pressure for 60 to 90 minutes. For a frozen roast of the same size, cook on high pressure for 90 to 120 minutes. Allow the pressure to release naturally to keep the meat tender and juicy.
  3. Make the gravy: After cooking, remove the roast and vegetables. Use the Instant Pot's sauté setting to bring the collected roast drippings to a boil. In a separate bowl, dissolve 3 tablespoons of flour in 1 cup of cold water, ensuring no lumps remain. Slowly whisk this mixture into the boiling drippings, stirring constantly to avoid clumps. Continue boiling until the gravy thickens to your desired consistency. If a thicker gravy is preferred, mix another tablespoon of flour with water and whisk it in. Season with salt and pepper to taste. Keep the gravy on low heat and stir occasionally until ready to serve.
  4. Serve: Slice the roast and serve it hot with your favorite potatoes and the rich homemade gravy poured over the top.

Notes

  • Cooking times vary depending on roast size and whether frozen or thawed; adjust accordingly.
  • Natural pressure release is crucial for tender, juicy results and to avoid tough meat.
  • You can substitute gluten-free flour to make the gravy gluten free.
  • The gravy can also be made on the stovetop if preferred by simmering drippings in a saucepan.
  • Leftover roast and gravy can be refrigerated for up to 3 days or frozen for up to 3 months.
