These fudgy ube brownies offer a delightful twist on classic chocolate brownies by incorporating ube halaya and ube extract for a vibrant purple color and unique sweet flavor. Rich and moist with a hint of white chocolate and cocoa, they are perfect for any dessert lover looking to try something new and colorful.

Ingredients

Brownie Batter

  • ½ cup unsalted butter
  • 6 ounces white chocolate chips
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup ube halaya (purple yam jam)
  • 1 teaspoon ube extract
  • ¾ cup all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • ½ teaspoon fine sea salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the right temperature for baking the brownies evenly.
  2. Prepare Pan: Line an 8 x 8-inch baking pan with parchment paper to prevent the brownies from sticking and to make removal easier.
  3. Melt Butter and White Chocolate: In a small saucepan over low heat, melt the butter and white chocolate chips together, stirring continuously for about 10 minutes until the mixture is smooth and fully combined. Remove it from the heat and set aside.
  4. Mix Sugars: In a large bowl, whisk together granulated sugar and brown sugar until blended well.
  5. Add Eggs and Vanilla: Add the eggs and vanilla extract to the sugar mixture and stir well to combine, ensuring there are no lumps.
  6. Combine Chocolate Mixture: Slowly whisk the melted butter and white chocolate mixture into the egg and sugar mixture until fully incorporated and smooth.
  7. Add Ube Flavor: Stir in the ube halaya and ube extract until the batter has a consistent purple color and flavor throughout.
  8. Incorporate Dry Ingredients: Add the all-purpose flour, unsweetened cocoa powder, and fine sea salt to the wet ingredients, stirring until just combined to avoid overmixing which can toughen the brownies.
  9. Pour and Bake: Pour the batter evenly into the prepared baking pan. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the center comes out with moist crumbs but no wet batter.
  10. Cool and Serve: Allow the brownies to cool completely in the pan on a wire rack before slicing into nine squares and serving. This ensures they set properly for fudgy texture.

Notes

  • Use parchment paper for easy removal and cleaner edges.
  • Do not overbake; brownies should be moist inside with a fudgy texture.
  • Ube halaya and ube extract can typically be found at Asian grocery stores or specialty markets.
  • For stronger ube flavor, add an extra ½ teaspoon of ube extract if desired.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
