Ingredients

Spices and Seasonings

  • 3 teaspoons salt (or more to taste, divided)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons Italian seasoning
  • 2 teaspoons paprika
  • Red pepper flakes (to garnish)

Meat and Potatoes

  • 2 pounds cubed steak (like sirloin, NY Strip)
  • 2 pounds Yukon gold potatoes (peeled and cubed into small bite-sized pieces)

Marinade and Cooking Ingredients

  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Browning sauce (optional, for color)
  • 2 tablespoons olive oil (divided)

Garlic Herb Butter

  • 6 tablespoons unsalted butter (softened)
  • 2 tablespoons parsley (chopped)
  • 2 tablespoons minced garlic
  • 1 teaspoon salt

Instructions

  1. Prepare spice mixture: In a small bowl, mix together the 3 teaspoons salt, garlic powder, onion powder, Italian seasoning, and paprika. Divide the mixture evenly into two portions and set aside.
  2. Make garlic herb butter: In another small bowl, combine the softened unsalted butter with the minced garlic, chopped parsley, and 1 teaspoon salt. Mix until well combined and set aside.
  3. Marinate steak: In a large bowl, toss the cubed steak with Worcestershire sauce, optional browning sauce, and half of the divided spice mixture until the steak is evenly coated.
  4. Parboil and season potatoes: Boil the peeled and cubed Yukon gold potatoes in boiling water for 5 to 6 minutes until they start to soften. Drain and let cool slightly. Toss the parboiled potatoes with the remaining half of the seasoning mixture and 1 tablespoon of olive oil until evenly coated.
  5. Sear steak: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once hot, sear the steak cubes for 5 to 7 minutes, turning occasionally until browned on all sides. Remove steak from skillet and set aside on a plate.
  6. Cook potatoes: In the same skillet, add the seasoned parboiled potatoes and cook over medium-high heat for 10 to 15 minutes, stirring occasionally, until golden brown and fork-tender.
  7. Combine and finish: Return the steak to the skillet with the potatoes. Stir in the garlic herb butter to coat everything evenly, allowing the steak and potatoes to soak up the flavors. Garnish with red pepper flakes and additional parsley before serving.

Notes

  • Parboiling the potatoes ensures they cook evenly and become tender without overcooking during skillet frying.
  • Browning sauce is optional but adds a richer color and deeper flavor to the steak.
  • Adjust salt amounts according to your taste and dietary preferences.
  • Use a heavy skillet or cast iron pan for better searing results.
  • For a spicier kick, increase the amount of red pepper flakes to garnish.
