Ingredients

Pancake Batter

  • 3 large eggs (at room temperature)
  • ½ cup all-purpose flour
  • ½ cup milk (at room temperature)
  • 1 tablespoon granulated sugar
  • ½ teaspoon vanilla extract

Cooking Fat

  • ¼ cup butter

Toppings (Optional)

  • Desired toppings such as powdered sugar, fresh fruit, syrup, or lemon wedges

Instructions

  1. Preheat Oven: Heat the oven to 425°F (220°C) and lower the oven rack to the lowest position to ensure even cooking of the pancake's base.
  2. Prepare Batter: Combine the eggs, all-purpose flour, milk, granulated sugar, and vanilla extract in a blender or food processor.
  3. Blend Ingredients: Blend the mixture until smooth and well combined. If preferred, whisk the ingredients together vigorously in a large bowl by hand until the batter is lump-free.
  4. Melt Butter in Skillet: Place the butter in an oven-safe 10-inch skillet, such as a cast iron skillet, and put it in the oven to melt the butter completely. Watch closely to prevent burning.
  5. Remove Skillet and Add Batter: Once the butter has melted and is sizzling, carefully remove the skillet from the oven and immediately pour the prepared batter into the hot butter.
  6. Bake the Pancake: Return the skillet to the oven and bake for 15 to 20 minutes, or until the pancake is puffed up and golden brown around the edges.
  7. Serve: Remove the skillet from the oven, cut the pancake into wedges, and serve hot with your choice of toppings such as powdered sugar, fresh fruit, syrup, or lemon wedges.

Notes

  • Ensure eggs and milk are at room temperature for a fluffier pancake texture.
  • Using a cast iron skillet is recommended for even heat distribution and better browning.
  • Watch the butter carefully while melting to avoid burning it, which can impart a bitter taste.
  • Feel free to add cinnamon or nutmeg to the batter for extra flavor.
  • This dish is best served immediately as it tends to deflate after cooling.
