Ingredients

Protein and Vegetables

  • 2 teaspoons extra-virgin olive oil
  • 1 pound ground turkey (93% lean)
  • 1 cup chopped red onion (about 1 small/medium onion)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon kosher salt (plus additional to taste)
  • 1/4 teaspoon ground black pepper
  • 1 red bell pepper (chopped into 1/2-inch pieces)
  • 1 can reduced-sodium chickpeas (14.5 ounces), rinsed and drained

Tomato and Seasonings

  • 1 can tomato sauce (15 ounces)
  • 2 tablespoons tomato paste
  • 1 tablespoon honey
  • 1 1/2 teaspoons dried oregano
  • 1/4 teaspoon ground nutmeg

Serving

  • 8 whole wheat hamburger buns (toasted if desired)
  • 6 ounces reduced-fat crumbled feta cheese
  • Sliced cucumber

Instructions

  1. Prepare the slow cooker and cook turkey mixture: Coat a 4- to 6-quart slow cooker with cooking spray. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the ground turkey and chopped red onion, cooking and breaking up the meat until the turkey is thoroughly cooked and the onion is tender, about 5-6 minutes. Add the minced garlic, kosher salt, and black pepper, cooking just until the garlic is fragrant, about 30 seconds. Transfer this cooked mixture to the slow cooker.
  2. Add remaining ingredients and slow cook: Into the slow cooker, add chopped red bell pepper, rinsed and drained chickpeas, tomato sauce, tomato paste, honey, dried oregano, and ground nutmeg. Stir all ingredients together until well combined. Cover and cook on low for 4 hours, allowing vegetables to soften, filling to heat through, and flavors to meld.
  3. Assemble and serve: Spoon the hot sloppy joe mixture onto the bottom halves of whole wheat hamburger buns. Top with reduced-fat crumbled feta cheese and sliced cucumber. Place the top bun on each sandwich and serve immediately for best taste.

Notes

  • Using lean ground turkey reduces fat content while keeping the dish protein-rich.
  • To enhance flavor, you can toast the hamburger buns before assembling.
  • If chickpeas are not preferred, you may substitute with another bean such as cannellini, but this will slightly alter texture.
  • Adjust salt and honey to taste, especially if using pre-seasoned tomato products.
  • For a vegetarian version, replace turkey with plant-based ground meat and omit feta or substitute with a vegan cheese alternative.
