It features a luscious blend of fresh herbs whipped into a tangy yogurt-mayonnaise spread, layered with cool cucumber, crisp lettuce, crunchy sprouts, and creamy avocado, all on toasted country bread.

Ingredients

Herb Spread

  • ½ cup fresh basil leaves
  • ⅓ cup fresh mint leaves
  • ⅓ cup fresh cilantro
  • ⅓ cup dill
  • 1 small bunch chives
  • 1 medium shallot, peeled and quartered
  • 1 tablespoon lemon juice
  • ½ cup full-fat Greek yogurt
  • ½ cup mayonnaise
  • 1 pinch salt

Sandwich

  • 2 thick slices country bread
  • 1 Persian cucumber, thinly sliced
  • 4 lettuce leaves
  • ⅓ cup sprouts (such as broccoli or alfalfa)
  • ½ ripe avocado, sliced

Instructions

  1. Prepare the Herb Spread: In the bowl of a blender, combine the basil, mint, cilantro, dill, chives, quartered shallot, lemon juice, full-fat Greek yogurt, mayonnaise, and a pinch of salt. Blend until the mixture is smooth and well incorporated.
  2. Toast the Bread: Lightly toast the two thick slices of country bread until golden and slightly crisp to add texture to the sandwich.
  3. Assemble the Sandwich - Herb Spread and Vegetables: Spread 2 tablespoons of the blended green herb mixture evenly over one slice of the toasted bread. Layer the thinly sliced Persian cucumber, fresh lettuce leaves, and sprouts on top of the spread.
  4. Assemble the Sandwich - Avocado Layer: On the other slice of toasted bread, evenly arrange the sliced ripe avocado.
  5. Combine and Serve: Sandwich the two slices of bread together, ensuring the herb spread and vegetables are on one side and the avocado on the other. Slice the sandwich in half for easier eating and serve immediately.

Notes

  • Using fresh herbs is key to achieving the bright, vibrant flavor of the green goddess spread.
  • Lightly toasting the bread adds crunch and prevents it from becoming soggy.
  • You can substitute mayonnaise with vegan mayonnaise and use a dairy-free yogurt to make this recipe vegan-friendly.
  • The sandwich is best enjoyed fresh, as avocado can brown quickly once sliced.
  • Feel free to customize the sprouts and lettuce with your favorites or what you have on hand.
