These Grilled Buffalo Hot Wings are a perfect blend of smoky, spicy, and buttery flavors, grilled to crispy perfection. Marinated with a flavorful beef rub and tossed in a homemade buffalo sauce, these wings are ideal for game day or any casual gathering.

Ingredients

Chicken Wings

  • 4 pounds chicken wings (flats and drumettes)
  • 1 Tablespoon avocado oil
  • 2 Tablespoons Hey Grill Hey Beef Rub (or equal parts salt, pepper, and garlic powder)

Buffalo Sauce

  • 1 cup Frank's RedHot Sauce (Frank's RedHot or your preferred hot sauce)
  • ¼ cup butter
  • 2 teaspoons brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat the grill: Set your grill to 425 degrees F to prepare for cooking the wings evenly and creating a crispy skin.
  2. Make the sauce: In a small saucepan, combine the hot sauce, butter, brown sugar, garlic powder, and Worcestershire sauce. Warm over medium-low heat until the butter melts, whisking thoroughly to combine. Do not bring to a boil. Set the sauce aside.
  3. Prep the wings: Pat the chicken wings dry with paper towels to remove excess moisture. Lightly spray or drizzle the wings with avocado oil to help the seasoning stick and promote crispiness. Season all sides evenly with the beef rub or your salt, pepper, and garlic powder mix.
  4. Grill the chicken wings: Place the wings directly on the hot grill grates and close the lid. Grill for 15-20 minutes, flipping every 3-5 minutes to avoid burning and ensure crisp skin. Use a meat thermometer to check for an internal temperature of 160°F.
  5. Toss wings with sauce and continue grilling: Remove the wings and transfer them to a large bowl. Pour half of the buffalo sauce over the wings and toss to coat evenly. Return the wings to the grill and continue cooking until they reach an internal temperature of 170-175°F for optimal tenderness and flavor.
  6. Final toss: Toss the wings again with the remaining buffalo sauce if you prefer them extra saucy, or serve the remaining sauce on the side for dipping.

Notes

  • Patting the wings dry before seasoning helps achieve a crispy skin on the grill.
  • Use a reliable meat thermometer to ensure proper doneness and food safety.
  • Flipping the wings regularly prevents burning and promotes even cooking.
  • You can adjust the spiciness by choosing your preferred hot sauce or adding more brown sugar for sweetness.
  • Serve with celery sticks and blue cheese or ranch dressing for a classic buffalo wing experience.
