This Grilled Meatloaf Sandwich recipe features warm, pan-fried slices of meatloaf paired with melted cheddar cheese, all sandwiched between buttery sourdough bread slices and grilled to golden perfection. It’s a comforting and hearty sandwich perfect for a quick lunch or dinner.

Ingredients

Sandwich Ingredients

  • 2 slices meatloaf (cold)
  • 4 slices cheddar cheese
  • 4 slices sourdough bread (or other small bread slices)
  • 2 tablespoons butter

Instructions

  1. Butter the bread: Generously butter the outside of all four slices of bread and set them aside. This will help achieve a golden, crispy crust during grilling.
  2. Heat the meatloaf: Place the two meatloaf slices into a small skillet and fry over medium heat. Turn occasionally to warm through and brown both sides slightly, enhancing flavor and texture.
  3. Assemble the sandwiches: Place one slice of bread butter side down in the skillet. Layer one slice of cheddar cheese on the bread, then a slice of the heated meatloaf, followed by another slice of cheddar cheese. Top with the second slice of bread, butter side facing out. Repeat the process for the second sandwich.
  4. Grill the sandwiches: Cook the sandwich until the bread bottom is browned and crispy. Carefully flip the sandwich to grill the other side, continuing until it is browned and the cheese inside has melted completely.
  5. Serve: Remove the sandwiches from the skillet. Place them on a plate and cut each sandwich in half to serve warm.

Notes

  • Use cold meatloaf slices to ensure they hold together while grilling.
  • Butter on the outside of the bread helps create a crispy golden crust.
  • You can substitute sourdough with any small sandwich bread of your choice.
  • Cook over medium heat to avoid burning the bread while ensuring the cheese melts thoroughly.
  • Leftover sandwiches can be reheated in a skillet or panini press for best results.
