Crispy and savory hash brown waffles loaded with melted sharp cheddar cheese, fresh chives, and eggs, perfect for a quick and delicious breakfast or brunch. These waffles are crispy on the outside and soft on the inside, served best with a dollop of sour cream for extra tang.

Ingredients

Main Ingredients

  • 20 ounce package shredded hash browns (refrigerated)
  • 3 large eggs
  • 1/4 cup milk
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup fresh chopped chives (plus extra for garnishing)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Sour cream (for serving, optional)

Instructions

  1. Preheat and prepare waffle iron: Heat your waffle iron on medium-high heat. Generously spray both sides of the waffle iron with non-stick cooking spray or brush with melted butter to prevent sticking.
  2. Mix ingredients: In a medium mixing bowl, whisk together the eggs and milk until combined. Add the shredded hash browns, shredded cheddar cheese, chopped chives, salt, and pepper. Stir well to combine all the ingredients evenly.
  3. Cook the waffles: Scoop about 1 cup of the potato mixture onto the waffle iron (adjust quantity according to your waffle iron size). Spread the mixture evenly leaving about half an inch from the edges. Close the waffle iron and cook for approximately 5 minutes, checking every few minutes to ensure the waffle doesn’t burn. The waffle is ready when it turns a golden brown color and is crispy on the outside. Carefully remove the waffle using a fork or tongs.
  4. Serve: Garnish with additional chopped chives and serve warm. Optionally, add a dollop of sour cream on top for extra flavor.

Notes

  • Using refrigerated shredded potatoes simplifies preparation and ensures consistent texture.
  • If your waffle iron is smaller or larger, adjust the amount of mixture accordingly to avoid overflow or thin waffles.
  • Check waffles periodically while cooking to prevent burning and achieve a nice golden crust.
  • For extra crispiness, you can leave the waffle on the iron for an additional minute if it’s not browned enough.
  • Sour cream adds a nice tang but can be omitted or substituted with Greek yogurt for a lighter option.
