Ingredients

Dry Ingredients

  • 1 ¾ cups white whole wheat flour or regular whole wheat flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Fruit

  • 1 cup grated apple
  • 1 cup apple diced into ¼” cubes

Wet Ingredients

  • ⅓ cup melted coconut oil or extra-virgin olive oil
  • ½ cup maple syrup or honey
  • 2 eggs, preferably at room temperature
  • ½ cup plain Greek yogurt (full-fat or any variety)
  • ½ cup applesauce
  • 1 teaspoon vanilla extract

Topping

  • 1 tablespoon turbinado sugar (raw sugar), for sprinkling on top

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit. Prepare your muffin tin by greasing all 12 cups with butter or non-stick spray if needed, although a non-stick pan might not require this step.
  2. Mix Dry Ingredients and Apples: In a large bowl, whisk together whole wheat flour, baking powder, cinnamon, baking soda, and salt until well combined. Add the grated apple (squeeze out excess moisture if dripping) and diced apple, then stir to evenly distribute the fruit.
  3. Prepare Wet Ingredients: In a medium bowl, whisk melted coconut oil and maple syrup together. Beat in the eggs thoroughly, then add Greek yogurt, applesauce, and vanilla extract, mixing until smooth. If coconut oil solidifies, gently warm the mixture in short intervals in the microwave to liquefy it.
  4. Combine and Fill Muffin Tin: Pour the wet ingredients into the dry mixture and gently mix with a large spoon just until combined; a few lumps are okay. The batter will be thick. Evenly divide the batter among the 12 muffin cups. Sprinkle each muffin top with turbinado sugar.
  5. Bake and Cool: Bake the muffins in the preheated oven for 13 to 16 minutes until golden on top and a toothpick inserted into the center comes out clean. Remove the muffin tin and place it on a cooling rack to cool before serving.
  6. Storage: Store leftover muffins covered at room temperature for up to 2 days, or refrigerated for up to 4 days. For longer storage, freeze muffins for up to 3 months.

Notes

  • You can substitute maple syrup with honey for natural sweetness.
  • If using coconut oil, warm the wet ingredients gently to prevent solidification.
  • The batter will be thick, don’t overmix to keep muffins tender.
  • Sprinkling turbinado sugar on top adds a pleasant crunch and sweetness.
  • Muffins freeze well and can be thawed for a quick, healthy snack.
