Ingredients

Wet Ingredients

  • 100 g / 3.5 oz pitted dates (1 heaped packed cup)
  • 1/3 cup / 85 ml boiling water
  • 1 egg
  • 3 tbsp maple syrup or honey
  • 3 tbsp coconut oil, melted (or other plain oil)
  • 1 tsp vanilla essence

Dry Ingredients

  • 1 1/4 cups rolled oats
  • 1/2 cup flaked almonds
  • 1/4 cup desiccated coconut
  • 1/2 cup raisins or sultanas
  • 3/4 cup almond meal (almond flour)
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) if using a conventional oven or 160°C (320°F) for a fan/convection oven. Line a baking tray with parchment or baking paper to prevent sticking.
  2. Prepare Dates: Roughly chop the pitted dates and place them in a bowl. Pour boiling water over the dates and cover, allowing them to soak for at least 10 minutes to soften.
  3. Mash Dates: Using a potato masher or fork, mash the softened dates in the water until they form a smooth paste, which will add natural sweetness and moisture to the cookies.
  4. Add Wet Ingredients: To the date paste, add the egg, maple syrup or honey, melted coconut oil, and vanilla essence. Mix well with a wooden spoon until combined thoroughly.
  5. Add Dry Ingredients: Add the rolled oats, flaked almonds, desiccated coconut, raisins or sultanas, almond meal, baking powder, and cinnamon to the wet mixture. Stir until all the flour is incorporated and you achieve a thick batter ready for shaping.
  6. Shape Cookies: Measure out the batter to make either 6 larger cookies (just shy of 1/2 cup each) or 8 smaller ones (about 1/3 cup each). Flatten each portion to rounds about 1.7 cm (2/3 inch) thick on the prepared tray.
  7. Bake: Bake the cookies in the preheated oven for 20 minutes or until they turn golden brown on the edges.
  8. Cool: Remove the cookies from the oven and allow them to cool on the tray before serving to set the texture and enhance flavor.

Notes

  • You can substitute maple syrup with honey for sweetness.
  • Coconut oil can be replaced with other neutral oils if preferred.
  • Flaked almonds, desiccated coconut, and raisins can be swapped out or combined with other nuts and dried fruits as desired.
  • Almond meal is also known as almond flour; ensure it's finely ground for best texture.
  • The cinnamon and vanilla essence add warmth and depth to the cookies' flavor.
  • Flattening the cookies to the specified thickness ensures even baking and chewy centers.
  • Letting the cookies cool on the tray allows them to firm up for better texture.
