A hearty and nourishing cabbage soup made with fresh vegetables and aromatic herbs, perfect for a comforting and healthy meal. This recipe features a blend of cabbage, carrots, celery, and tomatoes simmered in flavorful vegetable broth, seasoned with oregano, thyme, and paprika, offering a light yet satisfying option suitable for any season.

Ingredients

Vegetables

  • 1 large onion, chopped
  • 2 medium carrots, shredded or chopped
  • 1 stalk celery, chopped
  • 4 cloves garlic, minced
  • 1/2 head cabbage, shredded or chopped

Herbs and Spices

  • 1 teaspoon oregano, dried
  • 1/2 teaspoon thyme, dried
  • 1 teaspoon paprika
  • 1 teaspoon salt, or to taste
  • 1 teaspoon pepper, or to taste
  • 2 tablespoons parsley, for garnish

Liquids

  • 1/4 cup olive oil
  • 14.5 ounces diced tomatoes (1 can)
  • 8 cups vegetable broth (or chicken broth, low sodium)

Instructions

  1. Heat and sautée vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, shredded carrots, chopped celery, minced garlic, shredded cabbage, dried oregano, thyme, paprika, salt, and pepper. Stir well to combine all ingredients. Cook the mixture for about 5 to 7 minutes, stirring occasionally, until the onions and cabbage have softened and become fragrant.
  2. Add liquids and simmer soup: Pour in the diced tomatoes along with their juices and the vegetable broth. Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low and let the soup simmer gently for 30 minutes. This allows all flavors to meld and the vegetables to become tender.
  3. Garnish and serve: After the soup has simmered, taste and adjust seasoning if necessary. Ladle the soup into bowls and sprinkle the freshly chopped parsley on top as a garnish. Serve warm to enjoy a comforting and nutritious meal.

Notes

  • For a non-vegetarian option, substitute vegetable broth with low sodium chicken broth.
  • You can adjust the thickness of the soup by adding more or less broth based on your preference.
  • For added protein, consider stirring in cooked beans or lentils before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for longer storage.
  • Adding a splash of lemon juice or vinegar before serving can brighten the flavors.
