Ingredients

Main Ingredients

  • 1 pound lean ground beef
  • Salt and Pepper to taste
  • 4 medium yellow potatoes
  • 8 oz Colby Jack cheese, freshly grated

Soup Mixture

  • 10 ounce can cream of chicken soup
  • 10 ounce can cream of celery soup
  • 1/3 cup milk
  • 1/2 teaspoon all purpose seasoning
  • 1/2 teaspoon Worcestershire sauce

Topping

  • 1/2 cup French’s fried onions

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to ensure it's hot and ready for baking the casserole.
  2. Cook Ground Beef: Add the ground beef to a lightly greased 10-inch cast iron skillet. Break the beef apart and spread it evenly across the skillet for an even layer.
  3. Season Beef: Sprinkle salt and pepper over the ground beef to add flavor.
  4. Prepare Potatoes: Peel the yellow potatoes and slice them evenly, then layer the slices on top of the cooked ground beef in the skillet.
  5. Add Cheese Layer: Sprinkle the freshly grated Colby Jack cheese evenly over the potato layer.
  6. Mix Soup Sauce: In a large mixing bowl, combine the cream of chicken soup, cream of celery soup, milk, all-purpose seasoning, and Worcestershire sauce. Whisk thoroughly until smooth.
  7. Pour Sauce: Spoon the soup mixture evenly over the cheese layer. Use the back of a spoon to smooth it out.
  8. Cover and Bake: Cover the skillet tightly with aluminum foil. Place it on a baking sheet to catch any potential drips, then bake in the preheated oven for 90 minutes.
  9. Add Fried Onions: Carefully remove the foil and sprinkle the French's fried onions evenly over the top of the casserole.
  10. Broil Topping: Place the casserole under a hot broiler for 2-3 minutes, or until the fried onions turn golden brown and crispy.
  11. Garnish and Serve: Garnish with chopped green onions or parsley for a fresh finish before serving.

Notes

  • Ensure the potatoes are sliced evenly to cook through properly within the baking time.
  • Using a cast iron skillet not only helps cook the beef but also retains heat well for even cooking.
  • Covering the casserole tightly with foil traps moisture, making the potatoes tender.
  • Keep an eye on the casserole while broiling to prevent the fried onions from burning.
  • For a vegetarian version, substitute ground beef with plant-based meat and use vegetarian cream soups.
