This Homemade Chocolate Mousse recipe is a rich and creamy dessert made with semi-sweet chocolate, whipped egg whites, and heavy cream. It yields a light, airy mousse that’s perfect for impressive dinner parties or a special treat. The preparation involves melting chocolate with warmed cream, whipping a meringue base from egg whites and sugar, then folding them together before chilling to set.

Ingredients

Chocolate Ganache

  • 8 ounces (226g) semi-sweet chocolate, finely chopped (two 4-ounce bars)
  • 2/3 cup (160ml) heavy cream

Meringue

  • 4 large egg whites (120g)
  • 1/2 cup (100g) granulated sugar
  • 1/4 teaspoon cream of tartar
  • Pinch of salt

For Serving (Optional)

  • Whipped cream
  • Chocolate curls
  • Raspberries
  • Fresh mint leaves

Instructions

  1. Prepare Chocolate Ganache: Place the finely chopped semi-sweet chocolate in a medium heatproof bowl. Heat the heavy cream in a small saucepan over medium heat until it begins to gently simmer but not boil. Pour the hot cream over the chocolate and allow it to sit for 2 to 3 minutes to soften. Slowly stir with a metal spoon or silicone spatula until the chocolate has completely melted and the mixture is smooth. Set aside to cool slightly.
  2. Make the Meringue: In a heatproof bowl, combine the egg whites, granulated sugar, cream of tartar, and a pinch of salt. Set this bowl over a saucepan filled with two inches of simmering water, ensuring the bowl does not touch the water. Whisk constantly for about 4 minutes until the sugar dissolves completely and the mixture becomes frothy and thin. To test, carefully dip a finger in the mixture (it will be hot) and rub between thumb and finger; no sugar granules should be felt, or use an instant-read thermometer to confirm a temperature of 160°F (71°C).
  3. Whip the Meringue: Remove the bowl from heat and transfer the mixture to a clean mixing bowl if necessary. Using a handheld or stand mixer fitted with a whisk attachment, whip the hot mixture on high speed until stiff, glossy peaks form, about 7 minutes.
  4. Combine Chocolate and Meringue: Pour the cooled chocolate ganache into the whipped meringue. Gently fold them together using a silicone spatula until fully combined, being careful not to deflate the meringue.
  5. Chill the Mousse: Spoon or pipe the mousse into dessert dishes or ramekins. Refrigerate for at least 4 hours to allow the mousse to set properly. After about an hour, cover the dishes to prevent skin from forming. The mousse can be refrigerated up to 48 hours ahead.
  6. Serve: Just before serving, optionally top the mousse with whipped cream, chocolate curls, fresh raspberries, and mint leaves for garnish and additional flavor.

Notes

  • Ensure the egg whites reach 160°F to safely cook and dissolve the sugar.
  • Be gentle when folding the chocolate into the meringue to maintain airiness.
  • Cover the mousse after an hour in the fridge to avoid a skin forming on top.
  • The mousse can be made up to two days in advance and stored refrigerated.
  • Use good quality semi-sweet chocolate for the best flavor.
  • If concerned about consuming raw egg whites, opt for pasteurized eggs or heat the mixture properly as instructed.
