Ingredients

Beef Mixture

  • 1 lb. ground round
  • 1 (14 1/2-oz.) can diced tomatoes with basil, garlic, and oregano, undrained
  • 1 (10-oz.) can diced tomatoes and green chiles, undrained
  • 1 (6-oz.) can tomato paste
  • 1 tsp. salt
  • 1/2 tsp. dried Italian seasoning
  • 1/4 tsp. pepper

Noodles and Cream Mixture

  • 3 cups uncooked medium egg noodles
  • 5 green onions, chopped
  • 1 (8-oz.) container sour cream
  • 3 oz. cream cheese, softened

Cheese Topping

  • 4 oz. shredded sharp Cheddar cheese (about 1 cup)
  • 4 oz. shredded Parmesan cheese (about 1 cup)
  • 4 oz. shredded mozzarella cheese (about 1 cup)

Instructions

  1. Cook the beef mixture: In a large skillet over medium heat, brown the ground round for 5 to 8 minutes, stirring constantly, until the meat is crumbly and no longer pink. Drain excess fat. Stir in both cans of diced tomatoes (including their juices), tomato paste, salt, dried Italian seasoning, and pepper. Bring the mixture to a boil, then reduce the heat and simmer, uncovered, for 5 minutes. Remove from heat and set aside.
  2. Prepare the egg noodles: Preheat your oven to 350°F (175°C). Cook the egg noodles according to the package directions until al dente. Drain the noodles, then stir in the chopped green onions, sour cream, and softened cream cheese until well combined and creamy.
  3. Assemble the casserole: Lightly grease a 13- x 9-inch baking dish. Spoon the egg noodle mixture evenly into the dish. Pour the beef mixture over the noodles, spreading it evenly. Sprinkle the shredded sharp Cheddar, Parmesan, and mozzarella cheeses in order on top of the beef layer.
  4. Bake the casserole: Cover the baking dish with aluminum foil and bake at 350°F for 35 minutes. Then remove the cover and bake for an additional 5 minutes to allow the cheese to brown and bubble. Let the casserole stand for 10 to 15 minutes before serving to allow it to set and cool slightly.

Notes

  • For a spicier kick, you can add extra green chiles or a pinch of crushed red pepper flakes to the beef mixture.
  • If you prefer, substitute ground turkey or chicken for a lighter protein option.
  • Use fresh herbs like basil or oregano instead of dried for enhanced flavor.
  • Leftovers can be refrigerated for up to three days and reheated in the oven or microwave.
  • To make ahead, assemble the casserole but do not bake; cover and refrigerate for up to 24 hours before baking as directed.
