Ingredients

Vegetables

  • 1 lb carrots, peeled & cut into 1 inch pieces
  • 1 lb radishes, halved (about 2 bunches)

Honey Butter Sauce

  • 1/4 cup unsalted butter
  • 3 tbsp honey
  • 1 tsp fresh thyme
  • 1/4 tsp coarse salt
  • pinch ground pepper

Toppings

  • 1/3 cup chopped walnuts
  • 3 tbsp crumbled goat cheese

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prep Vegetables: Peel the carrots and cut them into 1-inch pieces. Trim the greens off the radishes and cut each radish in half. Arrange all the prepared vegetables evenly on the parchment-lined baking sheet.
  3. Make Honey Butter Sauce: In a small saucepan, melt the unsalted butter over medium-low heat. Once melted, stir in honey, fresh thyme, coarse salt, and ground pepper, combining well for about 15 to 30 seconds until fragrant and fully mixed.
  4. Coat Vegetables: Pour the honey butter mixture over the vegetables on the baking sheet. Use a spoon or spatula to toss and ensure all the carrot and radish pieces are evenly coated with the sauce.
  5. Roast Vegetables: Place the baking sheet in the preheated oven and roast the vegetables for 15 minutes. After 15 minutes, remove the pan from the oven and toss the vegetables to redistribute the sauce. Return to the oven and roast for an additional 15 minutes until the vegetables are tender and caramelized.
  6. Final Toss and Serve: Remove the vegetables from the oven and toss them a bit more on the baking sheet to pick up any remaining honey butter mixture. Transfer to a serving dish, pour over any residual sauce from the pan, then sprinkle with chopped walnuts and crumbled goat cheese. Serve immediately for best flavor and texture.

Notes

  • You can substitute fresh thyme with dried thyme but reduce the quantity to about 1/2 tsp as dried herbs are more concentrated.
  • For a nut-free version, omit the walnuts or replace with toasted pumpkin seeds.
  • Goat cheese adds a creamy tang, but feta or blue cheese can also be used based on preference.
  • If you prefer spicier, add a pinch of red pepper flakes to the honey butter sauce.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven to retain crispness.
