Ingredients

Chicken

  • 2 pounds boneless skinless chicken breast (about 3 large)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder

Sauce

  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • ⅓ cup honey
  • ¼ cup chicken broth (or water)
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • ½ teaspoon red pepper flakes

Instructions

  1. Prepare the sauce: In a small bowl, whisk together honey, chicken broth, rice wine vinegar, soy sauce, lemon juice, and red pepper flakes. Set aside to allow the flavors to blend.
  2. Even out the chicken thickness: Pound chicken breasts to an even thickness of about ¾ inch to ensure even cooking. Pat dry with paper towels to remove excess moisture.
  3. Season the chicken: In a small bowl, mix salt, black pepper, and garlic powder. Season both sides of the chicken breasts evenly with this mixture.
  4. Cook the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts in a single layer and cook for 3-4 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F/74°C).
  5. Sauté garlic: Push the cooked chicken to one side of the skillet. Add a splash of olive oil to the empty side and add the minced garlic. Cook for about 30 seconds until fragrant but not burnt.
  6. Add and thicken the sauce: Pour the prepared sauce into the skillet, swirling it to coat the garlic and chicken. Bring the sauce to a simmer and cook for 1-2 minutes until it thickens and becomes glossy.
  7. Coat the chicken and serve: Turn the chicken pieces to coat them thoroughly in the thickened sauce. Serve immediately, drizzled with extra sauce. Garnish with chopped green onions or fresh parsley for a fresh touch.

Notes

  • For juicier chicken, avoid overcooking and use a meat thermometer to check for doneness.
  • Chicken broth can be substituted with water if unavailable.
  • Adjust red pepper flakes to your preferred spice level or omit for no heat.
  • Use fresh lemon juice for a bright, natural citrus flavor.
  • Pair with steamed rice or sautéed vegetables for a complete meal.
