Ingredients

Rice

  • 1 cup white basmati rice

Shrimp

  • 1 lb shrimp
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 clove garlic, minced

Honey Garlic Sauce

  • 4 cloves garlic, minced
  • 1/2 tbsp red chili flakes
  • 2 tbsp honey
  • 2 tbsp low sodium soy sauce
  • 2 tbsp water
  • 1 tsp cornstarch

Vegetables

  • 3 medium carrots, finely chopped
  • 1 head of broccoli, chopped
  • 1 cup corn
  • 1 cup snow peas
  • Salt and black pepper, to taste

Instructions

  1. Cook Rice: Prepare the white basmati rice according to the package instructions until fluffy and set aside.
  2. Prepare Honey Garlic Sauce: In a small bowl, combine minced garlic, red chili flakes, honey, low sodium soy sauce, water, and cornstarch. Mix well to create a smooth sauce.
  3. Season Shrimp: Pat the shrimp dry with paper towels, then season with salt and pepper evenly.
  4. Sear Shrimp: Heat 1 tablespoon of olive oil in a frying pan over high heat. Add 1 clove of minced garlic and sauté briefly until fragrant. Add the shrimp and sear for 2-3 minutes on each side until they turn pink and are cooked through. Remove the shrimp from the pan and set aside.
  5. Sauté Vegetables: Reduce the heat to medium-high. In the same pan, add the chopped carrots and sauté for 2-3 minutes. If needed, add a little more olive oil. Next, add the broccoli and continue sautéing for another 2-3 minutes. Then add corn and snow peas, season with salt and black pepper, and pour in the previously prepared honey garlic sauce. Cook for 5 minutes, stirring occasionally, until the vegetables are tender and fully coated with the sauce.
  6. Assemble Meal Prep: Divide the cooked rice, sautéed vegetables, and seared shrimp evenly into 4 meal prep containers. Let cool before covering and refrigerating for up to 4 days.

Notes

  • Ensure shrimp is patted dry to achieve a good sear.
  • Adjust the amount of red chili flakes to control the spice level.
  • Vegetables can be substituted with your favorites or seasonal produce.
  • Meal prep containers should be airtight for freshness.
  • Reheat thoroughly before serving.
