A quick and delicious Honey Mustard Turkey Avocado Sandwich featuring creamy mashed avocado, tangy Dijon mustard with a touch of honey, thinly sliced deli turkey, crispy salt & vinegar potato chips, fresh heirloom tomatoes, and crisp microgreens, all layered between soft sourdough bread slices. Perfect for a satisfying lunch or light dinner in just 10 minutes.

Ingredients

Bread and Spread

  • 2 slices squishy sourdough bread
  • 1/2 ripe avocado, mashed
  • 1 tbsp Dijon mustard
  • 1 tsp honey

Filling

  • 5 oz thinly sliced deli turkey or chicken
  • Handful of salt & vinegar potato chips
  • 2-3 slices heirloom tomato
  • Handful of microgreens or lettuce

Instructions

  1. Prepare the spreads: Spread the mashed avocado evenly on one slice of the sourdough bread to create a creamy base. On the other slice, spread a thin layer of Dijon mustard and drizzle the honey over it for a sweet and tangy flavor contrast.
  2. Assemble the sandwich: Layer the thinly sliced deli turkey evenly over the avocado spread. Add a handful of salt & vinegar potato chips on top for a delightful crunch, followed by the 2-3 slices of fresh heirloom tomato and a handful of microgreens or lettuce for freshness.
  3. Finish and serve: Close the sandwich by placing the mustard and honey-coated bread slice on top. Slice the sandwich in half if desired, and enjoy immediately for the best texture and flavor.

Notes

  • Use ripe avocado for a smooth and creamy texture that spreads easily.
  • Adjust the amount of honey to your preferred level of sweetness.
  • Feel free to substitute turkey with chicken or your favorite deli meat.
  • For added flavor, toast the sourdough bread slightly before assembling.
  • The salt & vinegar chips provide crunch and tanginess, but you can swap for your preferred chip flavor or skip if avoiding salt.
