These Honey Oat Granola Bars are a wholesome and delicious breakfast or snack option. Made with toasted rolled oats, whole almonds, honey, and a hint of cinnamon, these bars combine natural sweetness with a delightful crunch. They are easy to prepare, requiring simple ingredients and baking the oats and nuts before combining with a warm honey-brown sugar mixture, then chilling to set. Perfect for on-the-go nourishment or a homemade treat.

Ingredients

Dry Ingredients

  • 2 cups rolled oats
  • 1 cup whole almonds (chopping optional)
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons ground flaxseed

Wet Ingredients

  • ¼ cup honey
  • ¼ cup dark brown sugar
  • ¼ cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a rimmed half baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Toast Oats and Almonds: Spread the oats and chopped almonds evenly on the prepared baking sheet. Bake them for about 10-15 minutes, stirring regularly, until they turn light brown and emit a toasty aroma. This step enhances the flavor and crunch.
  3. Prepare Baking Pan: Line an 8” x 8” baking pan with parchment paper to allow easy removal of the granola slab after setting.
  4. Make Honey Mixture: While the oats and almonds are toasting, combine honey, dark brown sugar, and unsalted butter in a heavy-bottomed medium saucepan over medium heat. Stir continuously until the mixture is melted and smooth.
  5. Add Flavorings and Mix: Remove the saucepan from heat and stir in salt, cinnamon, and vanilla extract. Then, fold in the toasted oats and almonds mixture along with the ground flaxseed until everything is thoroughly combined and evenly coated.
  6. Press into Pan: Transfer the mixture into the prepared baking pan and spread it out evenly. Use a piece of parchment paper to press down firmly and level the mixture to the edges for compact bars.
  7. Chill to Set: Cover the baking pan with plastic wrap and refrigerate for at least 2 hours to allow the granola to firm up properly.
  8. Cut into Bars: Once set and firm, lift the granola block out of the pan using the parchment paper. Use a very sharp knife to cut into 12 evenly sized bars for serving and storage.

Notes

  • For a nuttier texture, you can toast the almonds separately before mixing.
  • Use raw or roasted almonds based on your preference.
  • Store granola bars in an airtight container in the refrigerator for up to one week or freeze for longer storage.
  • Ground flaxseed adds fiber and omega-3 fats, but can be omitted if unavailable.
  • Pressing the mixture firmly is key to bars holding their shape after chilling.
  • Ensure not to overbake the oats and almonds as they can become too dark and bitter.
