Learn how to steam and enjoy fresh artichokes with two delightful dipping sauces — a lemon dill butter and a creamy lemon dill dip. This easy guide walks you through prepping, cooking, and eating artichokes perfectly, making for a nutritious and elegant appetizer or side dish.

Ingredients

Artichokes

  • 2 whole artichokes (about 320 g each with stems attached)
  • 1 medium lemon, sliced in half

Lemon Dill Butter Sauce

  • 2 Tbsp melted vegan butter or dairy butter
  • 1-2 tsp lemon juice
  • 1 small clove garlic, crushed or minced
  • 1/4 tsp dried dill
  • 1 healthy pinch sea salt

Creamy Lemon Dill Dip

  • 2 Tbsp plain unsweetened coconut yogurt
  • 2 Tbsp vegan mayonnaise or regular mayo
  • 1/2 tsp lemon juice
  • 1 small clove garlic, crushed or minced
  • 1/4 tsp dried dill
  • 1 healthy pinch sea salt

Instructions

  1. Cut the Artichoke: Hold the artichoke on its side on a cutting board. Using a large serrated knife, cut off the top third (about 1 inch) to create a flat surface exposing the inner petals. Then cut off the stem flush to the base so the artichoke can stand upright on the board.
  2. Steam the Artichoke: Pour approximately 2 inches of water into a large pot and place a steamer basket over it. Bring the water to a boil over high heat. Meanwhile, rub the outside of the artichoke petals and the cut flat top with the lemon halves to prevent browning. When water boils, reduce to medium heat and place the artichoke(s) top side down in the steamer basket. Cover and steam for 25 to 35 minutes depending on size, adding more water after 15 minutes if necessary to keep from drying out.
  3. Prepare Dipping Sauces: While the artichokes cook, mix ingredients for your preferred sauce in a small bowl. For Lemon Dill Butter, combine melted butter, lemon juice, garlic, dill, and salt. For Creamy Lemon Dill Dip, stir together coconut yogurt, vegan mayonnaise, lemon juice, garlic, dill, and salt. Adjust lemon juice and salt to taste.
  4. Check for Doneness: Using tongs, carefully transfer the artichokes to a plate. Pull out a petal; it should come out easily. If it resists, return to the steamer and cook for an additional 5 minutes or until petals release effortlessly.
  5. Eat the Artichoke: Place the artichoke on a serving plate. Starting from the outer leaves, pull off one petal at a time. Dip the thick bottom of the petal into your sauce, then scrape the soft fleshy part with your teeth. Discard the remaining tougher leaf. Continue until you reach petals with a pink hue, indicating you are near the heart.
  6. Remove the Artichoke Heart: Peel off all remaining petals to reach the center with hairy fibers called the choke. Use a spoon to gently scrape and scoop out the choke, discarding it. The tender, buttery round portion left behind is the artichoke heart. Slice it, dip it, or spoon sauce over it and enjoy.
  7. Serving and Storage: Serve artichokes warm and fresh as an appetizer or side dish. Leftovers can be stored in the refrigerator for 1 to 2 days.

Notes

  • Smaller artichokes will cook faster than larger ones; adjust steaming time accordingly.
  • Rub lemon on cut artichokes immediately to prevent browning.
  • Make sure to add water during steaming to avoid burning the pot.
  • Both sauces can be adjusted for more lemon or salt based on personal preference.
  • The fuzzy choke is not edible and must be fully removed before eating the heart.
  • Artichokes are best enjoyed warm and fresh.
