This Instant Pot Mexican Shredded Beef recipe is a flavorful and tender dish made with chunks of beef stew meat seasoned with classic Mexican spices, cooked quickly under pressure to achieve a melt-in-your-mouth texture. Perfect for tacos, burrito bowls, or salads, this recipe combines the convenience of the Instant Pot with vibrant lime and cilantro for a fresh finish.

Ingredients

Beef and Seasonings

  • 2 pounds beef stew meat (cut into small chunks, chuck roast or round roast works well)
  • 1 tablespoon chili powder
  • 2 teaspoons kosher salt
  • 2 teaspoons dried minced onion
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon freshly ground black pepper

Other Ingredients

  • 2 tablespoons cooking oil
  • 3/4 cup beef broth (or water)
  • 1 lime, juiced
  • 1/2 cup chopped cilantro

Instructions

  1. Season the Meat: In a large bowl, combine the beef chunks with chili powder, kosher salt, dried minced onion, ground cumin, garlic powder, dried oregano, and freshly ground black pepper. Toss thoroughly to evenly coat the meat with the seasoning blend.
  2. Sear the Beef: Press the sauté button on the Instant Pot and heat the cooking oil until hot. Add the seasoned beef pieces and sear them until browned on all sides, which helps to develop flavor and seal in juices.
  3. Pressure Cook: Pour in the beef broth (or water) to deglaze the pot if needed. Secure the lid and set the pressure valve to sealing. Cook the beef at high pressure for 50 minutes, allowing the tougher cuts of meat to become tender and shreddable.
  4. Release Pressure and Shred: Once cooking is complete, carefully perform a quick release by opening the pressure valve. Open the Instant Pot lid once the pressure has fully released. Using a slotted spoon, transfer the beef to a large plate and shred it finely using two forks.
  5. Finish and Serve: Return the shredded beef to the Instant Pot or a serving bowl. Stir in fresh lime juice and chopped cilantro to brighten and add fresh flavor. Serve the shredded beef warm in tacos, burrito bowls, or as a protein topping for salads.

Notes

  • For more depth of flavor, consider adding diced onions or minced garlic when sautéing the beef.
  • If you prefer a spicier dish, add a pinch of cayenne pepper or chipotle powder to the seasoning mix.
  • Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
  • To keep the beef moist, do not skip adding the broth during pressure cooking.
  • Shredding the beef while it is warm makes it easier and results in better texture.
