These Irish Soda Bread Muffins are a delightful twist on traditional Irish soda bread, transformed into individual, fluffy muffins packed with cheddar cheese and fresh herbs. Perfect for breakfast, brunch, or a savory snack, they offer a tender crumb with a golden crust, combining the tanginess of buttermilk with the savory flavors of chives, spring onions, and dill.

Ingredients

Dry Ingredients

  • 250 g plain flour (2 cups)
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 100 g grated cheddar cheese (1 cup)

Wet Ingredients

  • 250 ml buttermilk (1 cup)
  • 50 g butter, melted (1/4 cup)
  • 1 medium egg

Herbs

  • 1 tbsp chopped chives
  • 2 tbsp chopped spring onions
  • 1 tbsp chopped fresh dill

Instructions

  1. Prepare Dry Ingredients: In a large bowl, sift the plain flour and then add salt, bicarbonate of soda, and baking powder. Mix these dry ingredients thoroughly to ensure even distribution.
  2. Beat the Egg: Crack the egg into a jug and beat it well with a fork until smooth.
  3. Combine Melted Butter and Egg: Pour the melted butter into the beaten egg and mix well to combine these wet ingredients.
  4. Add Buttermilk: Pour the buttermilk into the egg and butter mixture, stirring to incorporate everything evenly.
  5. Mix Wet and Dry Ingredients: Pour the wet mixture over the dry ingredients in the large bowl, then add the chopped chives, spring onions, dill, and grated cheddar cheese.
  6. Combine to Form Batter: Use a spatula to mix everything gently until a thick, consistent batter forms; be careful not to overmix to keep the muffins light.
  7. Preheat Oven: Set your oven to 190 degrees Celsius (375 degrees Fahrenheit, 170 degrees fan) and allow it to fully heat.
  8. Prepare Muffin Tin: Grease and lightly flour a 12-hole muffin tin or line the cavities with paper muffin cases for easy removal.
  9. Fill Muffin Tin: Divide the batter evenly among the 12 muffin cavities, filling each about three-quarters full to allow room for rising.
  10. Bake the Muffins: Place the muffin tin in the preheated oven and bake for 17-20 minutes or until the muffins are golden brown, well risen, and a skewer inserted in the center comes out clean.

Notes

  • Ensure not to overmix the batter to keep the muffins tender and light.
  • Use fresh herbs for the best flavor; dried herbs will alter the taste significantly.
  • If you prefer a tangier taste, increase the buttermilk slightly.
  • These muffins are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • Reheat gently in the oven or microwave before serving for a fresh-baked experience.
