This Japanese Clear Soup is a delicate, flavorful broth made by simmering a harmonious blend of fresh vegetables and dual broths. Lightly sautéed carrot, onion, garlic, and ginger infuse the chicken and beef broth with subtle sweetness and warmth, enhanced by the umami of liquid aminos. Served with fresh mushrooms and green onions, this comforting soup is perfect as a light starter or a soothing meal.

Ingredients

Vegetables

  • 1 whole carrot, peeled and rough chopped
  • 1 medium onion, rough chopped
  • 5 cloves garlic, chopped
  • 4-inch knob of ginger, cleaned
  • 2 green onions
  • 3 mushrooms, thinly sliced

Liquids & Seasonings

  • 1 tbsp sesame oil
  • 3 cups chicken broth
  • 1 cup beef broth
  • 1 tbsp liquid aminos
  • Salt to taste

Instructions

  1. Prepare vegetables: Rough chop the carrot, onion, garlic, and cleaned ginger to prepare them for sautéing and flavor extraction.
  2. Sauté vegetables: In a medium-large pot, heat the sesame oil over medium heat. Add the chopped vegetables and sauté until they are slightly softened, about 5 to 8 minutes, releasing their aromatic flavors.
  3. Simmer broth: Add the chicken and beef broth to the pot with the sautéed vegetables. Cover and let it simmer gently for 1 hour, allowing the flavors to meld and create a rich broth.
  4. Strain and season broth: After simmering, strain out the vegetables from the broth. Season the clear broth with liquid aminos and salt to taste, adjusting the umami and saltiness to your preference.
  5. Prepare garnish: In serving bowls, distribute the thinly sliced mushrooms and green onions.
  6. Assemble and serve: Pour the hot, seasoned broth over the mushrooms and green onions in the bowls. Serve immediately to enjoy a light and comforting Japanese clear soup.

Notes

  • Use liquid aminos as a savory, gluten-free alternative to soy sauce.
  • For a vegetarian version, substitute chicken and beef broth with vegetable broth.
  • The longer the broth simmers, the deeper the flavor; do not rush the simmering process.
  • Feel free to add tofu or seaweed for additional texture and flavor.
  • Store leftover broth separately from the fresh garnish to maintain freshness.
