Perfect for keto and low-carb diets, these bars combine rich, sweet, and salty flavors for a delightful treat.

Ingredients

Crust and Topping

  • 2 cups almond flour
  • 1/2 cup Swerve Sweetener
  • 2 tbsp coconut flour
  • 1/4 tsp salt
  • 6 tbsp butter, melted
  • 1/2 tsp vanilla extract

Filling

  • 1 recipe sugar-free caramel sauce
  • 1/4 tsp sea salt, plus more if desired

Instructions

  1. Preheat the oven: Preheat your oven to 350ºF (175ºC) and line an 8x8 inch metal baking pan with parchment paper, leaving some overhang on the sides for easy removal of the bars.
  2. Mix dry ingredients: In a large bowl, whisk together the almond flour, Swerve sweetener, coconut flour, and salt until well combined.
  3. Add wet ingredients: Stir in the melted butter and vanilla extract into the dry mixture until the dough begins to clump together and form a crumbly dough.
  4. Form crust and bake: Press a little more than half of the dough evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 10 minutes, then remove and let cool for 10 minutes.
  5. Add caramel layer: Pour the sugar-free caramel sauce over the baked crust and spread it evenly to the edges. Sprinkle with 1/4 tsp sea salt, adding more if you prefer a stronger salted flavor.
  6. Add topping and bake again: Crumble the remaining dough over the caramel layer, pressing lightly to adhere. Bake for an additional 20 to 25 minutes until the caramel filling is bubbly and the topping is golden brown.
  7. Cool and serve: Remove the bars from the oven and let cool completely in the pan. Use the parchment paper overhang to lift the bars out before cutting into 16 pieces for serving.

Notes

  • Ensure the caramel sauce is sugar-free to keep this recipe keto-friendly.

  • If you prefer a less sweet treat, adjust the amount of sweetener accordingly.
  • These bars can be stored in an airtight container in the refrigerator for up to one week.
  • For best flavor, serve at room temperature or slightly chilled.
