This flavorful recipe for Lamb Chops with Cilantro and Mint Sauce combines tender, seared lamb chops with a vibrant, herbaceous sauce blending fresh mint, cilantro, and ginger. Perfectly caramelized on the outside and juicy inside, these lamb chops are enhanced by a tangy, slightly sweet sauce made quickly in a food processor, making it an impressive yet easy dish for gatherings or weeknight dinners.

Ingredients

For the Cilantro and Mint Sauce

  • 1/2 cup olive oil (plus more for searing)
  • 1/4 cup packed mint leaves
  • 1/4 cup packed cilantro leaves
  • 1/4 cup white wine vinegar
  • 2 to 3 teaspoons minced ginger
  • Drizzle of honey (optional)
  • Salt and freshly ground black pepper, to taste

For the Lamb Chops

  • 8 rib lamb chops (up to 3/4-inch thick, about 18 mm)
  • Mint or cilantro sprigs for garnish (optional)

Instructions

  1. Make the Cilantro Mint Sauce and Marinade: In a food processor fitted with a metal blade, pulse together 1/2 cup olive oil, 1/4 cup packed mint leaves, 1/4 cup packed cilantro leaves, 1/4 cup white wine vinegar, and 2 to 3 teaspoons minced ginger until combined but not fully puréed, maintaining some texture.
  2. Adjust the Sauce: Taste the sauce and if it needs a touch of sweetness, add a small drizzle of honey. Season with salt and freshly ground black pepper to enhance all the flavors.
  3. Marinate the Lamb Chops: Place the 8 rib lamb chops into a zip-top plastic bag and pour in 1/4 cup of the prepared marinade. Seal the bag and gently toss the chops to coat evenly.
  4. Marination Time: Refrigerate the sealed bag for at least 30 minutes or up to 4 hours, turning the bag once or twice during this time to ensure even marination. Store the remaining unused sauce in a covered bowl in the fridge.
  5. Heat the Skillet for Searing: Heat a large heavy-bottomed skillet over medium-high heat until very hot. Drizzle some olive oil into the pan to prevent sticking.
  6. Sear the Lamb Chops: Place the lamb chops in the hot skillet and cook for 4 to 5 minutes on each side, depending on thickness, to achieve a nice caramelized crust and medium-rare doneness.
  7. Rest the Lamb Chops: Transfer the seared lamb chops to a cutting board, cover loosely with aluminum foil, and let them rest for a few minutes. This helps the juices redistribute for a tender bite.
  8. Serve: Arrange the rested lamb chops on warm plates. Spoon the remaining cilantro-mint sauce over the top and garnish with fresh mint or cilantro sprigs if desired. Serve immediately for best flavor and texture.

Notes

  • Marinating the lamb chops is optional but highly recommended for deeper flavor.
  • The sauce can be made ahead and stored in the refrigerator for up to 2 days.
  • Adjust the amount of ginger and honey in the sauce to taste for balance between spiciness and sweetness.
  • Resting the meat after cooking ensures juicier lamb chops.
  • If preferred, lamb chops can be cooked to your desired doneness by adjusting searing time.
