This refreshing Lavender Coconut Lemonade combines the tangy zest of lemonade with the creamy smoothness of coconut milk and the floral notes of lavender simple syrup. Perfect for a hot summer day, this beverage is both soothing and invigorating, offering a unique twist on a classic favorite.

Ingredients

For the Drink

  • 6 ounces lemonade (store-bought or homemade State Fair Lemonade)
  • 2 tablespoons lavender simple syrup (homemade or store-bought)
  • 2 ounces canned unsweetened coconut milk (shake well before use)

For the Lavender Simple Syrup

  • ½ cup water
  • ½ cup granulated sugar
  • 2 tablespoons food-grade lavender flowers

Instructions

  1. Prepare the Lavender Simple Syrup: In a small saucepot, combine ½ cup water, ½ cup granulated sugar, and 2 tablespoons food-grade lavender flowers. Heat over medium heat, stirring occasionally until the sugar fully dissolves and the mixture reaches a rolling boil.
  2. Simmer and Steep: Reduce the heat to low and let the syrup simmer gently for 10 minutes, allowing the lavender flavor to infuse deeply.
  3. Cool and Strain: Remove the pot from heat and let the syrup sit and cool for 15 minutes. Then, strain the syrup through a fine mesh strainer into a glass container, discarding the lavender flowers.
  4. Mix the Drink: Fill a glass halfway with ice. Pour in 6 ounces of lemonade, 2 ounces of shaken unsweetened coconut milk, and 2 tablespoons of the prepared lavender simple syrup.
  5. Combine: Stir gently until all ingredients are well combined and chilled. Serve immediately for a refreshing beverage.

Notes

  • Shake the canned coconut milk well before measuring to ensure a smooth consistency.
  • Use food-grade lavender flowers to ensure safety and best flavor.
  • Lemonade can be homemade or store-bought, but fresh lemonade enhances the taste.
  • Adjust the sweetness by varying the amount of lavender simple syrup according to your taste preference.
  • Store leftover lavender syrup in a sealed container in the refrigerator for up to 2 weeks.
