A comforting and hearty leftover turkey soup made with fresh vegetables, tender turkey, and pearl couscous simmered in flavorful turkey stock. This quick and easy soup is perfect for using up leftover turkey and warming up on a chilly day.

Ingredients

Soup Base

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion (or 2 shallots), chopped
  • 1 large carrot, chopped
  • 2 stalks celery, chopped
  • 1 clove garlic, minced
  • 4 sprigs thyme (or 1/2 tsp dried thyme)

Broth and Protein

  • 1½ litres / 6 cups turkey or chicken stock
  • 250g / 2 cups cooked turkey or chicken, shredded
  • 2 bay leaves
  • Salt and pepper to taste

Additional Ingredients

  • 75g / 1/2 cup giant/pearl couscous
  • 1 tbsp parsley, chopped (for garnish)

Instructions

  1. Sauté vegetables and herbs: Heat olive oil and butter in a large pot over low heat. Add the chopped onion (or shallots), celery, carrot, minced garlic, and thyme leaves. Cook gently for 5 minutes, stirring occasionally, until the vegetables soften and release their aromas.
  2. Add stock and turkey: Pour in the turkey or chicken stock, add the shredded cooked turkey and bay leaves. Increase heat and bring the soup to a gentle boil. Season with salt and pepper according to taste.
  3. Cook couscous: Stir in the giant or pearl couscous. Reduce the heat to medium and let the soup simmer for 10 minutes, or until the couscous is tender and cooked through.
  4. Finish and serve: Remove bay leaves. Sprinkle chopped parsley over the soup for freshness and serve hot.

Notes

  • You can substitute the turkey with leftover chicken or any other cooked poultry.
  • Use dried thyme if fresh thyme is not available, but reduce quantity to about 1/2 tsp.
  • Adjust the broth consistency by adding more stock or water if you prefer a thinner soup.
  • For added flavor, you can include a splash of lemon juice or a dash of hot sauce before serving.
  • This soup freezes well for up to 3 months; cool completely before storing in airtight containers.
