These Lemon Blueberry Energy Balls are a nutritious and delicious breakfast snack packed with natural sweetness from Medjool dates and dried blueberries, a zesty kick of lemon, creamy raw cashews, and protein powder for sustained energy. Perfect for a quick on-the-go bite or a pre/post-workout treat, they require no cooking and come together quickly in a food processor.

Ingredients

Energy Ball Base

  • 1/2 cup Medjool dates (about 6)
  • 1/2 cup dried blueberries
  • 1 cup raw cashews

Flavoring

  • Zest of 1 lemon
  • 1 tablespoon lemon juice

Protein

  • 2 scoops vanilla protein powder

Instructions

  1. Process Dry Ingredients: Add the Medjool dates, dried blueberries, and raw cashews to a food processor and pulse on high speed for about 30 seconds until the mixture achieves a sandy, crumbly texture.
  2. Add Flavor and Protein: Remove the lid and add the lemon zest, lemon juice, and vanilla protein powder to the food processor. Process again until a cohesive dough forms.
  3. Shape the Energy Balls: Scoop the dough and roll it into tablespoon-sized balls, placing each onto a plate or tray as you go.
  4. Set the Balls: Place the formed energy balls in the refrigerator or freezer for about 20-30 minutes to firm up.
  5. Store Properly: Keep the energy balls refrigerated or frozen to maintain freshness and texture. Consume within 1 week if refrigerated or up to 1 month if frozen.

Notes

  • You can replace cashews with almonds or walnuts for a different nutty flavor.
  • Medjool dates provide natural sweetness; if unavailable, substitute with other soft dried dates.
  • If your protein powder is sweetened, adjust lemon juice accordingly to balance tartness.
  • Energy balls can be stored in an airtight container in the fridge for up to a week or in the freezer for up to a month.
  • Use parchment paper on the plate to prevent sticking while shaping the balls.
