Lemon Crinkle Cookies are soft and chewy treats with a bright, zesty lemon flavor. These cookies feature a delightful cracked sugary crust that combines powdered and granulated sugar for a beautiful presentation and a perfect sweet-tart balance. Easy to prepare and baked to perfection, they make a refreshing and irresistible dessert or snack.

Ingredients

Cookie Dough

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 whole egg
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 cups all-purpose flour

For Coating

  • 1/4 cup granulated sugar
  • 1/2 cup powdered sugar

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350° F (175° C). Grease a light-colored baking sheet with nonstick cooking spray or line it with parchment paper to prevent sticking and ensure even baking.
  2. Cream Butter and Sugar: In a large bowl, use a hand mixer to cream together the softened butter and 1 cup granulated sugar until the mixture becomes light and fluffy, which usually takes a few minutes.
  3. Add Wet Ingredients: Whip in the vanilla extract, whole egg, lemon zest, and fresh lemon juice. Scrape down the sides of the bowl to incorporate all ingredients evenly, and mix again briefly.
  4. Incorporate Dry Ingredients: Switch to a rubber spatula and gradually stir in the all-purpose flour, salt, baking soda, and baking powder. Mix slowly until just combined; avoid overmixing to keep the cookies tender. Scrape the bowl sides again and blend briefly.
  5. Shape and Coat Cookies: Pour 1/4 cup granulated sugar onto a large plate, and 1/2 cup powdered sugar onto another. Take heaping teaspoons of dough and roll each into a ball. Roll each ball first in granulated sugar and then in powdered sugar to form a sugary crust. Place the coated balls evenly spaced on the prepared baking sheet.
  6. Bake: Bake in the preheated oven for 9 to 11 minutes, or until the bottoms of the cookies just start to turn a light golden brown and the tops look matte rather than shiny or melty.
  7. Cool: Remove the cookies from the oven and let them cool on the baking sheet for about 3 minutes to firm up. Then transfer them to a cooling rack to cool completely.

Notes

  • Using a light-colored baking sheet helps prevent over-browning on the cookie bottoms.
  • Do not overmix the dough to keep the cookies tender and soft.
  • Chilling the dough for 15-30 minutes before rolling can help maintain the cookie shape and enhance flavor.
  • The dual sugar coating creates the signature crinkle texture and a sweet surface.
  • Store cookies in an airtight container at room temperature for up to 5 days.
