This refreshing Lemon Curd Chia Pudding combines the bright, tangy flavors of fresh lemons with creamy coconut milk and nutrient-packed chia seeds. A natural sweetener and a hint of turmeric add warmth and balance to this chilled, dairy-free dessert or breakfast option. It's easy to prepare, requires no cooking, and sets overnight to a luscious, pudding-like texture.

Ingredients

Liquid Base and Flavorings

  • Zest of a large lemon (or 2 small lemons)
  • Juice of 2 large lemons
  • 13.5 or 15 oz can full fat coconut milk (about 1.5 cups)
  • 1/4 cup water (optional)
  • 3 tbsp or more sweetener (I use raw sugar)
  • A good pinch of salt
  • 1/4 tsp or more turmeric

Thickening Agent

  • 3 tbsp or more chia seeds (5 to 6 tbsp for well set pudding)

Garnish

  • Whipped coconut cream
  • Lemon zest

Instructions

  1. Blend Ingredients: Combine the lemon zest, lemon juice, full fat coconut milk, water (if using), sweetener, salt, and turmeric in a blender. Blend until all the ingredients are well incorporated and smooth. Then add the chia seeds and pulse the blender once or twice to evenly distribute them throughout the mixture without fully pulverizing the seeds.
  2. Adjust Flavor: Taste the blended mixture and adjust the sweetness and tanginess according to your preference by adding more lemon juice or zest if desired. Blend again to mix the adjustments thoroughly.
  3. Chill to Set: Pour the mixture evenly into serving glasses or bowls. Place them in the refrigerator and chill overnight to allow the chia seeds to absorb the liquid and form a pudding-like consistency. After about one hour of chilling, give the mixture a gentle stir to prevent clumping if necessary.
  4. Serve and Garnish: Once the pudding is fully set and chilled, garnish the top with whipped coconut cream and a sprinkle of fresh lemon zest. Serve immediately for a refreshing, creamy dessert or breakfast treat.

Notes

  • For a thicker pudding, increase chia seeds to 5 or 6 tablespoons as needed.
  • You can substitute raw sugar for honey, maple syrup, or any sweetener of choice.
  • The optional water can be omitted for a richer pudding.
  • Turmeric adds a subtle earthy flavor and a beautiful golden color but can be adjusted or left out if preferred.
  • Ensure to stir after an hour of chilling to distribute chia seeds evenly and avoid clumps.
  • Use full fat coconut milk for the creamiest texture and best flavor.
