This quick and delightful Lemon Mug Cake is a perfect single-serving treat, combining zesty lemon flavor with a moist, fluffy texture. Ready in just minutes, this easy recipe uses simple pantry ingredients and can be baked in the oven or quickly cooked in the microwave for a fast indulgence.

Ingredients

Dry Ingredients

  • 6 tbsp flour
  • 3 tbsp sugar (or xylitol, 36g)
  • 1/2 tsp baking powder
  • 1/8 tsp salt

Wet Ingredients

  • 3 tbsp water
  • 1 tbsp lemon juice
  • 1 1/2 tbsp butter (or oil or mashed banana, 18g)
  • 2 tsp lemon zest
  • 1/2 tsp pure vanilla extract (2g)

Instructions

  1. Mix Dry Ingredients: In a mixing bowl, thoroughly combine the flour, sugar (or xylitol), baking powder, and salt to ensure even distribution of the leavening and sweetness.
  2. Add Wet Ingredients: Stir in the water, lemon juice, melted butter (or oil or mashed banana), lemon zest, and vanilla extract into the dry mixture until you form a smooth batter without lumps.
  3. Prepare Mug: Lightly grease a microwave-safe mug or a large ramekin to prevent sticking and make removal easier after cooking.
  4. Transfer Batter: Pour or spoon the batter into the prepared mug, spreading it evenly.
  5. Cook: Either bake the mug cake in a preheated oven at 350°F (175°C) for about 10 minutes, or microwave on high for approximately 2 minutes (time may vary based on microwave wattage) until the cake is fluffy and set.
  6. Cool & Serve: Allow the mug cake to cool for a minute or two before enjoying it warm. Optionally, add a dusting of powdered sugar or a dollop of whipped cream for extra indulgence.

Notes

  • Adjust microwave cooking time according to your microwave's wattage to avoid overcooking or undercooking.
  • Substitute butter with oil or mashed banana for a dairy-free or different flavor profile.
  • Using xylitol instead of sugar is a diabetic-friendly option.
  • For a stronger lemon flavor, add more lemon zest or juice, but be careful not to make the batter too wet.
  • Ensure the mug or ramekin is microwave-safe if using the microwave method.
