Ingredients

Croutons

  • 2 cups torn ciabatta bread
  • 1 clove garlic, grated
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt

Salad

  • 6 cups mixed salad greens
  • 1 cup mixed fresh herbs: basil, dill, thyme
  • 1 cup grated parmesan cheese
  • 3 tablespoons toasted sesame seeds
  • 1 - 2 avocados, cubed or sliced

Vinaigrette

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons toasted sesame oil
  • 3 tablespoons lemon juice
  • 3 tablespoons champagne vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Chili flakes, to taste

Instructions

  1. Prepare Croutons: Preheat the oven to 425°F (220°C). In a bowl, toss together torn ciabatta bread, grated garlic, a pinch of salt, and 2 tablespoons of extra virgin olive oil until evenly coated. Spread the bread pieces on a baking sheet and bake for 10-12 minutes, or until golden and toasted. Remove and let cool slightly.
  2. Assemble Salad: In a large salad bowl, combine 6 cups of mixed salad greens, 1 cup of mixed fresh herbs (basil, dill, thyme), the toasted croutons, 1 cup of grated parmesan cheese, and 3 tablespoons of toasted sesame seeds. Toss gently to mix all ingredients.
  3. Make Vinaigrette: In a jar with a lid, combine 1/3 cup extra virgin olive oil, 3 tablespoons toasted sesame oil, 3 tablespoons lemon juice, 3 tablespoons champagne vinegar, 2 teaspoons Dijon mustard, 2 teaspoons honey, 1 teaspoon garlic powder, salt, pepper, and chili flakes to taste. Secure the lid tightly and shake vigorously until well emulsified. Taste and adjust seasoning as desired.
  4. Toss Salad with Vinaigrette: Pour the prepared vinaigrette over the salad mixture and toss thoroughly to coat all ingredients evenly.
  5. Add Avocado and Serve: Top the dressed salad with cubed or sliced avocado just before serving for a creamy, fresh finish. Enjoy immediately.

Notes

  • Adjust the amount of garlic and chili flakes according to your spice preference.
  • For extra crunch, add toasted nuts such as almonds or walnuts.
  • Use ripe but firm avocados to maintain texture in the salad.
  • The vinaigrette can be prepared ahead and refrigerated for up to 3 days; shake well before using.
  • This salad pairs well with grilled chicken or fish for a more substantial meal.
