These Lemon Truffles are a delightful, creamy treat that combines the tangy zest of lemon with smooth cream cheese or coconut butter for a refreshing and easy-to-make dessert. Perfectly sweetened with powdered sugar or erythritol, these no-bake truffles can be enjoyed as is or dipped in white chocolate for an elegant touch.

Ingredients

Main Ingredients

  • 4 oz cream cheese (or coconut butter)
  • 2 tbsp butter (or additional coconut butter)
  • 3 tbsp powdered sugar (or erythritol)
  • Zest of one lemon

Optional Ingredients

  • 3 oz white chocolate chips
  • 1 drop natural food coloring (or pinch turmeric for color)

Instructions

  1. Prepare Ingredients: Bring the cream cheese and butter to room temperature so they become soft and easier to blend.
  2. Combine Ingredients: Blend cream cheese, butter, powdered sugar, lemon zest, and optional natural food coloring until smooth using a hand mixer for the best texture. Stirring with a fork is an alternative but less smooth method.
  3. Shape the Truffles: Spread the mixture into a container or freeze it briefly until firm enough to scoop balls using a mini cookie scoop. Place the scooped balls onto a parchment-lined plate.
  4. Freeze: Freeze the shaped truffles until they are firm enough to hold their shape well.
  5. Optional Coating: Melt the white chocolate chips, optionally stirring in half a teaspoon of oil for a smoother coating. Dip the truffles into the melted chocolate or coconut butter and allow them to set.
  6. Serving and Storage: For the presentation like in photos, cut each coated truffle in half once the chocolate sets. Refrigerate or freeze leftovers to maintain freshness.

Notes

  • You can substitute cream cheese with coconut butter for a dairy-free version.
  • If you prefer a low-sugar option, replace powdered sugar with erythritol.
  • Adding a drop of natural food coloring or a pinch of turmeric enhances the visual appeal without affecting flavor.
  • Stirring oil into melted white chocolate helps create a smoother coating but is optional.
  • These truffles must be kept refrigerated or frozen to maintain firmness.
  • Use a mini cookie scoop for uniform truffle sizes, which helps with even chilling and coating.
