Ingredients

Marinade

  • 1/2 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons champagne vinegar or apple cider vinegar
  • 2 teaspoons honey
  • 1-2 cloves garlic, grated
  • 1/2 cup fresh basil, chopped
  • 2 tablespoons chopped fresh thyme
  • Kosher salt, to taste
  • Black pepper, to taste
  • Chili flakes, to taste

Tomatoes & Cheese

  • 3 cups cherry tomatoes, halved
  • 2-3 balls burrata cheese, at room temperature

Serving

  • Grilled bread or crackers, for serving

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together the extra virgin olive oil, balsamic vinegar, champagne or apple cider vinegar, honey, grated garlic, chopped fresh basil, and chopped fresh thyme. Season the mixture to taste with kosher salt, black pepper, and chili flakes to add a mild spicy kick.
  2. Marinate the tomatoes: Add the halved cherry tomatoes to the bowl with the marinade. Toss gently to evenly coat the tomatoes in the flavorful mixture. Let the tomatoes marinate at room temperature for 30 minutes to allow the flavors to meld, or refrigerate and marinate overnight. If chilled, bring the tomatoes back to room temperature before serving for the best flavor.
  3. Serve with burrata: Just before serving, break the balls of burrata cheese into chunks and place them in a serving bowl. Arrange the marinated cherry tomatoes around the burrata, allowing the juices to mingle.
  4. Accompany with bread or crackers: Serve the marinated tomatoes and burrata alongside grilled or toasted bread or crackers, perfect for scooping and enjoying this fresh, creamy, and tangy delight.

Notes

  • For a more intense flavor, marinate the tomatoes overnight in the refrigerator.
  • Bring refrigerated tomatoes to room temperature before serving to maximize flavor.
  • Use a good quality burrata for the creamiest texture and rich taste.
  • Adjust chili flakes to your spice preference or omit if sensitive to heat.
  • This dish can be prepared ahead of time for easy entertaining.
