A vibrant and zesty Mexican Coleslaw featuring a tangy lime and taco-seasoned dressing, combined with fresh cabbage, black beans, grilled corn, red pepper, jalapenos, and topped with crunchy pepitas. Perfect as a side dish for tacos, barbecues, or any Mexican-inspired meal.

Ingredients

Dressing

  • 3/4 cup mayonnaise
  • 1/3 cup sour cream
  • 2 tablespoons lime juice
  • 1/2 packet taco seasoning

Salad

  • 1 (14-ounce) bag coleslaw mix
  • 1 cup shredded red cabbage
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup cooked corn kernels (preferably grilled corn)
  • 1/2 cup diced red pepper
  • 1/3 cup finely diced red onion
  • 1/3 cup chopped fresh cilantro
  • 2 jalapenos (seeded and finely diced)
  • 1/4 cup pepitas

Instructions

  1. Make the dressing: In a small bowl, whisk together the mayonnaise, sour cream, lime juice, and taco seasoning until fully combined and smooth.
  2. Combine the salad ingredients: In a large bowl, add the coleslaw mix, shredded red cabbage, black beans, cooked corn kernels, diced red pepper, finely diced red onion, chopped fresh cilantro, and finely diced jalapenos. Gently toss to mix all ingredients evenly.
  3. Dress the salad: Pour the prepared dressing over the salad ingredients and stir thoroughly to coat the veggies and beans evenly with the flavorful sauce.
  4. Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow flavors to meld and the coleslaw to chill nicely.
  5. Add pepitas & serve: Just before serving, sprinkle the pepitas on top for added crunch and a nutty finish.

Notes

  • For extra smoky flavor, use grilled corn kernels.
  • Adjust jalapeno quantity according to your heat preference.
  • This coleslaw can be prepared a few hours in advance but is best served within 24 hours for optimal freshness.
  • For a lighter version, substitute mayonnaise with Greek yogurt.
  • Keep pepitas separate until serving to maintain their crunch.
