A hearty and flavorful Mexican Ground Beef Skillet recipe that combines seasoned ground beef, bell peppers, black beans, and quick-cooking rice in one pan. Perfect for a quick and satisfying dinner that's both filling and easy to make in just 30 minutes.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1/2 medium yellow onion, minced
  • 2 large bell peppers, diced
  • 1 lb. 85% ground beef
  • 3 tablespoons homemade taco seasoning
  • 1/2 cup tomato sauce
  • 2 tablespoons green chiles
  • 15 oz. canned black beans, drained and rinsed
  • 1 cup quick-cooking brown rice (quick-cooking white rice works too!)
  • 1.5 cups beef broth (any kind)
  • 1/2 cup Mexican shredded cheddar cheese

Instructions

  1. Heat Oil and Sauté Vegetables: Heat 1 tablespoon olive oil over medium/high heat in a large nonstick skillet until fragrant. Add 1 tablespoon minced garlic, 1/2 medium minced yellow onion, and 2 diced large bell peppers. Sauté for 3-5 minutes until softened.
  2. Cook Ground Beef: Push the sautéed vegetables to the side of the skillet and add 1 pound of 85% ground beef. Cook for 7-9 minutes, stirring occasionally, until the beef is fully browned and cooked through. Then mix the vegetables and beef together in the pan.
  3. Add Seasonings and Beans: Stir in 3 tablespoons homemade taco seasoning, 1/2 cup tomato sauce, 2 tablespoons green chiles, and 15 oz. drained and rinsed canned black beans. Cook this mixture for a few minutes to blend the flavors.
  4. Add Rice and Broth: Add 1 cup of quick-cooking brown rice and 1.5 cups beef broth to the skillet. Raise the heat to medium/high and bring the mixture to a boil.
  5. Simmer the Skillet: Once boiling, reduce heat to low and cover the skillet. Let it simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  6. Melt Cheese: Sprinkle 1/2 cup Mexican shredded cheddar cheese evenly over the skillet. Allow the cheese to melt naturally on the stovetop or place the skillet in a preheated oven at 400ºF for a few minutes to fully melt the cheese.
  7. Serve: Serve the beef skillet hot, optionally with tortilla chips on the side for a crunchy complement.

Notes

  • Quick-cooking rice can be substituted with quick-cooking white rice if preferred.
  • If you don’t have homemade taco seasoning, use about 2 tablespoons of store-bought taco seasoning.
  • For a spicier version, add chopped jalapeños or extra green chiles.
  • To melt cheese in the oven, be sure your skillet is oven-safe.
  • Leftovers reheat well and make great next-day lunches.
