This Mexican Street Corn Casserole is a creamy, cheesy, and slightly spicy dish inspired by the classic street corn flavors. It combines sweet corn with mayonnaise, sour cream, queso fresco, and a blend of spices baked to bubbly perfection, making it a perfect side dish for any gathering or a comforting addition to your meals.

Ingredients

Main Ingredients

  • 40 oz bag frozen corn (thawed or frozen as per preference)
  • 2/3 cup mayonnaise
  • 2/3 cup sour cream (full fat or light)
  • 2 teaspoons chili powder (divided)
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 6 oz queso fresco (crumbled and divided)
  • 3 tablespoons cilantro (chopped)
  • Fresh limes (optional, for spritzing at the end)

Instructions

  1. Prepare Oven and Pan: Preheat your oven to 350°F. Lightly spray a 13x9 inch baking pan with nonstick spray to ensure easy release after baking.
  2. Mix Ingredients: In a large bowl, combine the corn (either thawed or frozen), mayonnaise, sour cream, 1 ½ teaspoons of chili powder, garlic powder, salt, and 4 oz of crumbled queso fresco. Stir everything together until well incorporated.
  3. Assemble and Bake: Pour the mixture into the prepared baking pan. Sprinkle the remaining ½ teaspoon chili powder evenly over the top. Bake in the preheated oven for 35 to 45 minutes, or until the casserole is heated through and bubbling around the edges.
  4. Garnish and Serve: Remove the casserole from the oven, and immediately top with the remaining 2 oz of queso fresco and chopped cilantro. Optionally, spritz with fresh lime juice to add a bright, tangy finish. Serve warm for best flavor.

Notes

  • You can use the corn frozen or thaw it beforehand; the cooking time remains the same.
  • For a lighter version, use light sour cream and reduced-fat mayonnaise.
  • Queso fresco can be substituted with feta or cotija cheese if unavailable.
  • Spritzing fresh lime juice just before serving adds a nice acidity that balances the richness.
  • To make it spicier, consider adding a pinch of cayenne pepper or using chipotle powder instead of chili powder.
