Million Dollar Rotel Dip is a rich, creamy, and flavorful dip perfect for gatherings and game days. Combining seasoned ground beef, three types of cheese, fire-roasted tomatoes with green chiles, and pickled jalapeños, this slow-cooked dip offers a deliciously cheesy and slightly spicy appetizer served warm with tortilla chips.

Ingredients

Meat and Seasoning

  • 1 tsp. canola oil
  • 2 lb. lean ground beef (93/7)
  • 1 (1-oz.) packet street taco carne asada seasoning (such as McCormick)

Vegetables and Chiles

  • 2 (10-oz.) cans fire-roasted diced tomatoes with green chiles (such as Rotel), undrained
  • 1 (7-oz.) can diced mild green chiles, undrained
  • 1/2 cup drained diced pickled jalapeños, plus more for garnish (from 1 [12-oz.] jar)

Dairy

  • 1 (12-oz.) can evaporated milk
  • 2 lb. block white American cheese, cut into 1- to 1 1/2-in. cubes (about 8 cups)
  • 1 (8-oz.) block Monterey or pepper Jack cheese, cut into 8 cubes
  • 1 (8-oz.) block medium Cheddar cheese, cut into 8 cubes

To Serve

  • Tortilla chips, for serving

Instructions

  1. Cook ground beef: Heat the canola oil in a large skillet over high heat. Add the ground beef and the street taco carne asada seasoning. Cook, stirring frequently to crumble the meat, until the beef is browned and no longer pink, about 6 to 7 minutes. Drain excess fat if desired.
  2. Combine cheeses and vegetables: While the beef is cooking, place the fire-roasted diced tomatoes with green chiles, evaporated milk, diced mild green chiles, and all three cheeses (white American, Monterey or pepper Jack, and medium Cheddar) into a 6-quart slow cooker.
  3. Add cooked ground beef: Stir the browned ground beef into the slow cooker mixture until evenly combined.
  4. Slow cook the dip: Cover the slow cooker and cook on the LOW setting. Stir the mixture once every hour to ensure even melting and prevent sticking. Continue cooking until all the cheeses are melted and the dip is creamy, approximately 2 1/2 hours.
  5. Add pickled jalapeños and serve: Stir in the drained diced pickled jalapeños, adjusting to your preferred spice level. Garnish with additional jalapeños if desired. Serve the dip hot with tortilla chips for dipping.

Notes

  • For a spicier dip, increase the amount of pickled jalapeños or use hot green chiles instead of mild.
  • If you don’t have a slow cooker, you can melt the ingredients over low heat on the stovetop, stirring frequently.
  • Drain the ground beef fat to reduce grease in the dip, or use leaner ground beef to keep it less oily.
  • The dip can be kept warm on the slow cooker’s warm setting for serving over several hours.
  • Storing leftovers in an airtight container in the refrigerator will keep the dip good for 3-4 days. Reheat gently on the stovetop or in the microwave, stirring often.
