Delightful Mini McGriddle Bites combine fluffy pancake batter with savory breakfast sausage, melted cheddar cheese, and a hint of sweet maple syrup, all baked into perfectly sized mini muffins. These tasty bites are ideal for breakfast on-the-go or a crowd-pleasing brunch appetizer.

Ingredients

Dry Ingredients

  • 2 cups Hungry Jack pancake mix

Wet Ingredients

  • 1 1/2 cups water
  • 1/4 cup maple syrup

Other Ingredients

  • 1 pound Jimmy Dean breakfast sausage, browned and drained
  • 1 cup cheddar cheese, shredded

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F (204 degrees C). Prepare two mini muffin pans by placing liners into each cup or greasing them thoroughly to prevent sticking.
  2. Mix Batter: In a medium-sized bowl, combine the pancake mix with water, stirring gently until just combined; some lumps are fine to keep the batter light. Then fold in the browned and drained breakfast sausage, shredded cheddar cheese, and maple syrup until evenly distributed.
  3. Fill Muffin Pans: Spoon the batter evenly into the prepared mini muffin pans, filling each cup almost to the top to allow for rising during baking.
  4. Bake: Place the pans in the preheated oven and bake for about 15 minutes, or until the bites are lightly browned and a toothpick inserted into the center comes out clean. Remove from the oven and let cool slightly before serving.

Notes

  • Ensure the sausage is thoroughly cooked and drained before mixing to avoid excess grease in the batter.
  • For a sweeter version, drizzle additional maple syrup on the bites after baking.
  • You can substitute cheddar cheese with other types like pepper jack or mozzarella for different flavor profiles.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven or microwave.
  • This recipe makes approximately 48 mini bites, perfect for parties or family breakfasts.
