This refreshing cucumber sandwich recipe features creamy labneh blended with fresh herbs, layered with thinly sliced cucumbers, and nestled between soft, crustless bread. Perfect as a light snack, appetizer, or tea-time treat, these easy-to-make sandwiches are flavorful, herbaceous, and delightfully crisp in every bite.

Ingredients

Herb Labneh Spread

  • 1 cup labneh, (homemade or store-bought)
  • 3 tablespoons finely chopped parsley
  • 3 tablespoons finely chopped dill
  • 3 tablespoons chopped basil
  • Kosher salt, to taste
  • Extra virgin olive oil, for drizzling

Sandwich Assembly

  • ½ English cucumber, thinly sliced
  • 8 slices soft bread, crust removed

Instructions

  1. Prepare the Herb Labneh Spread: In a small mixing bowl, combine the labneh with the finely chopped parsley, dill, and basil. Add a dash of kosher salt and drizzle with extra virgin olive oil. Mix thoroughly until all ingredients are well incorporated.
  2. Spread the Bread: Arrange the eight slices of soft bread on a large cutting board. Spread a generous spoonful of the herb labneh mixture evenly over one side of each slice of bread.
  3. Layer the Cucumbers: On half of the bread slices, neatly arrange thin cucumber slices, overlapping them to cover the entire slice. Ensure an even layer for balanced flavor and texture.
  4. Assemble the Sandwiches: Place the remaining bread slices, labneh side down, over the cucumber-covered slices, creating four sandwiches total. Gently press down to help the sandwiches hold together.
  5. Cut and Serve: Using a sharp knife, cut each cucumber sandwich into quarters—triangles or rectangles according to your preference. Arrange the sandwich pieces on a serving plate, garnish with extra dill, and if desired, place any leftover cucumber slices on the plate for decoration. Serve immediately and enjoy!

Notes

  • This recipe is best served fresh to maintain the crispness of the cucumbers and softness of the bread.
  • For a variation, substitute the herbs with chives or mint for different but complementary flavors.
  • Labneh can be substituted with cream cheese or Greek yogurt for a similar creamy base.
  • If gluten-free bread is used, the recipe can be suitable for gluten-free diets.
  • To make it vegan, use a plant-based yogurt to prepare vegan labneh.
