These No-Bake Cheesecake Cups are a quick and easy dessert that combines a buttery graham cracker crust with a smooth, creamy cheesecake filling. Perfect for when you need a delicious treat without turning on the oven, these individual servings can be topped with fresh fruit or your favorite toppings for an elegant, fuss-free finish.

Ingredients

Crust

  • 3/4 cup graham cracker crumbs
  • 2 tbsp salted butter, melted

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream

Optional Toppings

  • Raspberries
  • Strawberries
  • Whipped cream
  • Broken cookies
  • Extra graham cracker crumbs

Instructions

  1. Prepare the crust: In a small bowl, stir together the melted butter and graham cracker crumbs until the mixture is evenly combined. Spoon about 2-3 tablespoons of this mixture into the bottom of each glass or serving dish, pressing lightly to create a firm base.
  2. Whip the cream: In a large bowl or the bowl of a stand mixer, beat the heavy whipping cream on high speed until stiff peaks form, which should take about one minute. Scrape the whipped cream into a separate bowl and set aside.
  3. Mix cream cheese filling: In the original mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until the mixture is completely smooth and creamy, ensuring no lumps remain.
  4. Fold whipped cream into filling: Gently fold the whipped cream into the cream cheese mixture using a spatula, stirring until it is thoroughly combined and creamy, taking care not to deflate the whipped cream.
  5. Assemble the cups: Transfer the cheesecake filling to a piping bag if desired, and pipe or spoon the mixture evenly into each prepared cup over the graham cracker crust layer.
  6. Add toppings and chill: Top each cheesecake cup with fresh fruit such as raspberries or strawberries, or other toppings like whipped cream or broken cookies if you prefer. Cover and refrigerate the cups for at least one hour to allow the filling to set before serving.

Notes

  • Make sure the cream cheese is fully softened to avoid lumps in the cheesecake mixture.
  • For firmer cups, chill overnight instead of just one hour.
  • You can substitute graham cracker crumbs with digestive biscuits or any similar cookies.
  • Adjust sweetness by adding more or less sugar to taste.
  • Use fresh fruit toppings close to serving time to maintain their texture and flavor.
