Ingredients
Wet Ingredients
1/2 cup salted butter
1/2 cup whole or 2% milk
2 teaspoons vanilla extract
3/4 cup creamy peanut butter (Jif or Skippy's preferred)
Dry Ingredients
1 cup granulated sugar
1 cup packed brown sugar
1/4 cup unsweetened cocoa powder
2 3/4 cups quick oats (up to 3 cups)
Instructions
Prepare Your Workspace: Gather all ingredients, measure them out, and set them aside. Line a large baking sheet or a clean countertop space with parchment or wax paper. This will be the surface where you’ll drop the cookies to cool and set.
Melt Ingredients Over Low Heat: Place a medium saucepan over low heat. Add the butter, granulated sugar, brown sugar, cocoa powder, and milk. Stir continuously to allow the butter to slowly melt and to smooth out any lumps in the cocoa powder using a whisk.
Increase Heat and Boil: Once the butter has melted completely, increase the heat to medium. Stir constantly and watch carefully for the mixture to begin bubbling. To check, you may briefly stop stirring to see bubbles forming at the edges of the pan.
Boil for Exactly One Minute: When bubbling starts, set a timer for one minute and keep stirring constantly. Timing is critical — under one minute and the cookies may not properly set; over one minute and they will be dry and crumbly.
Remove from Heat and Add Flavorings: Take the pan off the stove. Immediately stir in the vanilla extract and peanut butter until the mixture is smooth and fully combined.
Mix in the Oats: Add the quick oats and stir until they are evenly coated. The mixture should be thick yet still glossy, ready to be shaped.
Drop Cookies onto Prepared Surface: Using a spoon or cookie scoop, quickly drop spoonfuls of the cookie mixture in circular shapes onto your parchment paper. Work somewhat quickly as the mixture begins to set as it cools.
Let Cookies Set: Allow the cookies to sit at room temperature for 20 to 30 minutes until firm. For faster setting, place them in the refrigerator for about 15 minutes.
Notes
Timing the boil step exactly to one minute is essential for the perfect cookie texture.
Use parchment paper over wax paper for best non-stick results.
Quick oats can be increased up to 3 cups for a firmer cookie.
If you prefer a firmer cookie, refrigerate for 15 minutes instead of room temperature setting.
This recipe requires no baking, making it ideal for quick treats or no-oven kitchens.
