This Old-Fashioned Scalloped Potatoes recipe offers a creamy, cheesy, and comforting side dish perfect for family dinners or special occasions. Thinly sliced white potatoes are layered and baked in a rich sauce made with butter, onions, garlic, vegetable stock, milk, and two types of cheese, resulting in a golden, bubbling casserole with a tender texture and savory flavor.

Ingredients

Potatoes

  • 2 pounds medium-sized white potatoes

Sauce

  • 3 tablespoons butter
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, crushed
  • 5 tablespoons all-purpose flour
  • 1 cup vegetable stock
  • 2 cups whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Cheese

  • ¾ cup grated cheddar cheese
  • ¾ cup grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the scalloped potatoes.
  2. Prepare Potatoes: Peel the potatoes and slice them thinly into rounds to ensure even cooking and a tender texture.
  3. Sauté Onions: Melt the butter in a pan over medium heat, then add the thinly sliced onions and fry for about 5 minutes until they become soft and translucent.
  4. Add Garlic: Add the crushed garlic to the onions and continue cooking for a few more minutes to release its aroma and flavor.
  5. Make Roux: Stir in the all-purpose flour with the onion and garlic mixture, cooking for another few minutes to cook out the raw flour taste and form a roux base for the sauce.
  6. Add Vegetable Stock: Gradually pour in the vegetable stock, stirring continuously after each addition to avoid lumps and to create a smooth sauce.
  7. Season Sauce: Season the sauce with salt and black pepper to enhance the flavors.
  8. Incorporate Milk: Slowly stir in the whole milk, little by little, until the sauce becomes smooth and creamy.
  9. Prepare Baking Pan: Grease a baking pan adequately to prevent sticking and for easy cleanup.
  10. Layer Potatoes: Arrange half of the potato slices evenly in the bottom of the prepared pan.
  11. Add Sauce and Cheese: Pour about half of the prepared sauce over the potato layer, then sprinkle half of the grated cheddar and Parmesan cheeses evenly over the sauce.
  12. Second Layer: Layer the remaining potato slices on top of the first cheese-covered layer.
  13. Top with Sauce and Cheese: Cover the second potato layer with the remaining sauce and finish by sprinkling the remaining cheeses on top.
  14. Bake Covered: Cover the pan with foil and bake in the preheated oven for 1 hour to allow the potatoes to cook through and the flavors to meld.
  15. Bake Uncovered: Remove the foil and bake for an additional 30 minutes to brown the top and achieve a bubbly, golden crust.

Notes

  • For best results, slice the potatoes evenly to ensure uniform cooking.
  • If you prefer a richer sauce, substitute some of the whole milk with heavy cream.
  • Vegetable stock can be replaced with chicken stock for a non-vegetarian version.
  • Use a sharp cheddar and fresh Parmesan cheese for enhanced flavor.
  • Let the scalloped potatoes sit for 5-10 minutes after baking before serving to set properly.
  • You can add fresh herbs like thyme or rosemary for additional flavor if desired.
  • Ensure the pan is well greased to prevent sticking during baking.
