This moist and flavorful Olive Oil Cake combines the richness of olive oil with the tanginess of lemon and Greek yogurt. Perfectly tender and subtly sweet, this cake is easy to make and ideal for any occasion, whether you want a light dessert or a delightful afternoon treat.

Ingredients

Dry Ingredients

  • 1 ¼ cups all-purpose flour
  • ⅔ cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • ⅔ cup olive oil
  • ½ cup Greek yogurt
  • 2 large eggs (at room temperature)
  • 3 tablespoons lemon juice
  • 1 lemon (zested)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350ºF (175ºC). Lightly oil a 9-inch round cake pan to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk together to ensure even mixing.
  3. Add Wet Ingredients: Create a well in the center of the dry ingredients and pour in the olive oil, Greek yogurt, and eggs. Whisk these into the flour mixture gently but thoroughly until combined.
  4. Incorporate Lemon: Add the lemon juice and lemon zest to the batter. Stir carefully until the mixture is completely combined and smooth, with no lumps remaining.
  5. Bake: Pour the batter into the prepared cake pan. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Allow the cake to cool for at least 10 minutes in the pan. Slice and serve. For an extra touch, add a dollop of Greek yogurt and fresh raspberries on top if desired.

Notes

  • Room temperature eggs help create a smoother batter and better rise.
  • Be sure not to overmix the batter once the wet and dry ingredients are combined to keep the cake tender.
  • Using fresh lemon zest and juice adds vibrant citrus flavor.
  • You can substitute plain yogurt if Greek yogurt is unavailable, but Greek yogurt yields a creamier texture.
  • For a different flavor twist, consider adding a teaspoon of vanilla extract.
