Ingredients

Salmon and Seasoning

  • 4 (6-ounce) salmon filets (Alaskan Sockeye or Coho preferred)
  • Salt and pepper to taste

Glaze and Cooking

  • 2 tablespoons avocado oil
  • 1 orange, juiced
  • 2 cloves garlic, minced
  • 2 tablespoons honey
  • 2 tablespoons tamari
  • 1 teaspoon thyme, finely chopped
  • 1/2 teaspoon arrowroot flour
  • 1 teaspoon water

Instructions

  1. Prepare and Season: Pat the salmon fillets dry thoroughly with a paper towel to ensure a good sear. Then, season both sides of the salmon with salt and pepper according to your taste preferences.
  2. Sear the Salmon: Heat 2 tablespoons of avocado oil in a pan over medium-high heat. Carefully add the salmon fillets skin-side down and cook for 3-4 minutes on each side until the fish is opaque and cooked through with a nice golden crust.
  3. Make Arrowroot Slurry: While the salmon cooks, combine 1/2 teaspoon arrowroot flour with 1 teaspoon water in a small bowl. Stir until smooth to create a slurry and set it aside.
  4. Remove Salmon: Transfer the cooked salmon fillets to a plate and set them aside to rest while you prepare the glaze.
  5. Sauté Garlic and Prepare Glaze: Reduce the heat to medium-low and add the minced garlic to the pan. Sauté for about 30 seconds until fragrant but not browned. Then add the freshly squeezed orange juice, 2 tablespoons honey, 2 tablespoons tamari, chopped thyme, and the prepared arrowroot slurry into the pan. Whisk the mixture continuously for 1-2 minutes until the sauce thickens slightly and becomes glossy.
  6. Glaze the Salmon: Return the salmon fillets back to the pan. Spoon the orange glaze generously over each fillet to coat them evenly. Heat together briefly to meld the flavors before serving immediately.

Notes

  • Use fresh orange juice for the best flavor and a natural, vibrant glaze.
  • The arrowroot slurry helps thicken the glaze without altering the flavor; ensure you stir well to avoid lumps.
  • Adjust cooking time slightly depending on the thickness of the salmon fillets to avoid overcooking.
  • This recipe works well with other fish like trout or cod as alternatives.
  • Serve with steamed vegetables or rice for a complete meal.
