Crispy and aromatic Parmentier Potatoes roasted with olive oil, garlic, and fresh herbs like rosemary and thyme. This classic side dish offers golden, flavorful potato cubes perfect to accompany any meal, easily prepared either in the oven or air fryer.

Ingredients

Ingredients

  • 2 tbsp Olive oil
  • 1 kg Potatoes
  • 3 Garlic cloves (Peeled and chopped)
  • 1 tbsp Fresh rosemary (Finely chopped)
  • 1 tbsp Fresh thyme (Finely chopped)
  • Sea salt and freshly ground black pepper (Season generously)

Instructions

  1. Preheat the oven: Switch the oven on to 200°C fan/220°C/425°F/Gas Mark 7 and place a baking sheet with olive oil on it into the oven to heat.
  2. Prep the potatoes: Peel the potatoes and cut them into cubes. Dry thoroughly using kitchen paper or a clean tea towel to remove excess moisture.
  3. Roast the potatoes: When the oven has reached temperature, carefully remove the hot baking sheet and add the potato cubes. Toss the potatoes in the hot oil to coat them evenly.
  4. Cook until golden: Return the baking sheet to the oven and roast the potatoes for 40-50 minutes, turning the potatoes a couple of times during cooking to ensure even browning.
  5. Add herbs and garlic: Sprinkle the chopped garlic, fresh rosemary, thyme, sea salt, and freshly ground black pepper over the potatoes. Stir gently to combine, then cook for an additional 5 minutes until fragrant and golden all over.
  6. Alternative air fryer method - Prep: Peel and cube the potatoes, then dry them thoroughly with kitchen paper or a clean tea towel.
  7. Air fry the potatoes: Place the potato cubes in the air fryer and drizzle with olive oil, stirring to coat evenly. Cook at 200°C (fan)/220°C/425°F for 20 minutes.
  8. Midway shake: Shake the air fryer basket vigorously halfway through the cooking time to promote even crisping.
  9. Add herbs in air fryer: After 20 minutes, add the garlic, rosemary, thyme, salt, and pepper. Continue cooking for another 5-10 minutes until the potatoes turn golden brown and crisp.

Notes

  • Be sure to dry the potatoes well before cooking to maximize crispiness.
  • Use fresh herbs for the best aroma and flavor.
  • Adjust seasoning to taste, considering the saltiness of your side dishes.
  • You can substitute fresh herbs with dried, but reduce quantity by half as they are more concentrated.
  • If using the oven method, turning the potatoes during roasting ensures even golden coloring and crisp texture.
  • Cooking times may vary slightly depending on potato variety and equipment.
