Ingredients

Cooked Peaches

  • 1 ½ cups diced peaches (fresh or frozen)
  • 2 tsp maple syrup or honey
  • Pinch of salt

Peach Milk Base

  • 3/4 cup milk of choice
  • 2 tbsp honey (adjust to taste)
  • 1 tbsp vanilla bean paste (or 2 tsp vanilla extract)
  • 1 tsp lemon juice

Main Chia Pudding

  • 1 cup plain Greek yogurt (0% fat preferred)
  • 1/2 cup chia seeds

Jammy Peach Layers

  • 1 cup diced peaches
  • 2 tsp maple syrup or honey
  • Pinch of salt
  • Squeeze of lemon juice

Optional Garnish

  • Dollop of Greek yogurt
  • Fresh mint leaves

Instructions

  1. Cook down the peaches: Add 1 ½ cups diced peaches, 2 tsp maple syrup or honey, and a pinch of salt to a small pan over medium heat. Cook for 5-7 minutes, stirring occasionally, until the peaches are very soft, jammy, and liquid has reduced. Allow to cool slightly.
  2. Make the peach milk base: Transfer the cooked peaches to a blender. Add 3/4 cup milk of choice, 2 tbsp honey, 1 tbsp vanilla bean paste (or 2 tsp vanilla extract), and 1 tsp lemon juice. Blend until smooth and creamy.
  3. Mix the base: In a large bowl, add 1 cup plain Greek yogurt. Pour in the peach milk mixture and stir until fully combined and silky smooth.
  4. Add chia seeds: Stir in 1/2 cup chia seeds thoroughly. Let the mixture sit for 5 minutes, then stir again to prevent the seeds from clumping.
  5. Chill the pudding: Refrigerate the pudding for at least 2-4 hours or overnight until it thickens and becomes creamy and scoopable.
  6. Prepare jammy peach layers: In the same pan, add 1 cup diced peaches along with 2 tsp maple syrup or honey, a pinch of salt, and a squeeze of lemon juice. Cook over medium heat for 5-7 minutes until the mixture thickens and becomes glossy and jam-like. Let it cool.
  7. Assemble the jars: Layer the chia pudding and jammy peach mixture alternately in serving jars or bowls. Start with a layer of chia pudding, then spoon some jammy peaches, repeat, and finish with a layer of jammy peaches on top.
  8. Garnish and serve: Optionally, add a dollop of Greek yogurt and a fresh mint leaf on top for an elegant finish before serving.

Notes

  • Chia seeds absorb liquid and thicken the pudding; stirring after 5 minutes helps avoid clumps.
  • You can use fresh or frozen peaches depending on season and availability.
  • Adjust the sweetness by varying the amount of honey or maple syrup to your preference.
  • Use 0% fat Greek yogurt for a lighter version or full-fat for creamier texture.
  • This pudding can be prepared the night before for convenience.
  • For a vegan option, substitute Greek yogurt with a plant-based yogurt and choose a non-dairy milk.
