This Peanut Butter & Raspberry Cottage Cheese Bowl is a high-protein, low-fat breakfast or snack option, combining creamy cottage cheese with the rich flavors of peanut butter and fresh raspberries. Sweetened with a monk fruit erythritol blend, it’s a delicious, guilt-free indulgence featuring optional crunchy toppings of sugar-free chocolate chips and peanuts for added texture.

Ingredients

Main Ingredients

  • ½ cup low-fat (2% milkfat) cottage cheese
  • ⅓ cup fresh, organic raspberries
  • 2 tablespoons no-sugar added peanut butter
  • 1 tablespoon powdered monk fruit with erythritol sweetener (or other sweetener of choice)

Optional Toppings

  • 1 tablespoon Lily's Semi-Sweet Baking Chips, crushed
  • 1 tablespoon peanuts, crushed

Instructions

  1. Soften Peanut Butter: If the peanut butter is not at room temperature, soften it in the microwave for about one minute to make it easier to blend smoothly.
  2. Combine Ingredients: In a food processor, add the cottage cheese, softened peanut butter, sweetener, and half of the raspberries. Pulse until the mixture is smooth and creamy.
  3. Add Remaining Raspberries: Add the remaining raspberries to the food processor and pulse briefly to incorporate them without fully pureeing, leaving small chunks for texture.
  4. Finish and Serve: Spoon the mixture into a serving bowl, and top with additional fresh raspberries, crushed sugar-free chocolate chips, and crushed peanuts. Serve immediately for the best flavor and texture.

Notes

  • Make sure the peanut butter is softened for smooth blending.
  • Use fresh raspberries for the best taste; frozen could cause the texture to become too watery.
  • Monk fruit sweetener can be substituted with any preferred sweetener like stevia or erythritol.
  • The crushed chocolate chips and peanuts are optional but recommended for added crunch.
  • This recipe is best enjoyed immediately but can be stored in the fridge for up to one day.
