These Pistachio Cookies are a delightful treat combining the rich flavors of butter, cream cheese, and pistachio pudding mix for a unique, soft, and flavorful cookie experience. Enhanced with chopped pistachios and chocolate chips, these cookies offer a satisfying crunch and a hint of chocolate that makes them perfect for any occasion.

Ingredients

Wet Ingredients

  • 1 cup butter (2 sticks, softened and cut into pats)
  • 8 ounce package cream cheese
  • 0.75 cups white sugar
  • 1 egg
  • 1.5 teaspoons vanilla extract

Dry Ingredients

  • 2.25 cups all-purpose white flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 3.4 ounce package pistachio pudding mix (regular or instant)

Add-ins

  • 0.5 cup chopped pistachios
  • 0.5 cup chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and prepare cookie sheets or baking sheets for the cookies.
  2. Cream Ingredients: In a mixer, cream together the softened butter, cream cheese, and white sugar until well combined and smooth.
  3. Add Egg and Vanilla: Beat in the egg and vanilla extract until the mixture is fully blended.
  4. Incorporate Dry Ingredients: Gradually add the flour, baking powder, pistachio pudding mix, and salt into the wet mixture. Mix until everything is just combined into a cookie dough.
  5. Stir in Nuts: Fold in the chopped pistachios carefully; the dough will become thick and a bit hard to stir at this point.
  6. Form Cookies: Using a medium cookie scoop, place dough balls onto the cookie sheets, about 16 per sheet, spacing them evenly.
  7. Bake: Bake the cookies in the middle rack of the oven for about 15 minutes, checking them after 12 minutes. They should be slightly soft to the touch and have lightly browned edges. Once baked, let them rest on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Optional Chocolate Dip: If desired, melt the chocolate chips in the microwave in 30-second intervals, stirring after each interval until smooth. This typically takes about 1 minute and 30 seconds. Dip cooled cookies partially into the melted chocolate for an extra indulgent treat.
  9. Enjoy: Serve your delicious pistachio cookies, enjoy, and share the smiles they bring!

Notes

  • Checking cookies a few minutes before the suggested baking time is important because oven temperatures can vary widely.
  • You can use regular or instant pistachio pudding mix depending on availability; both work well.
  • If you don’t prefer chocolate, you can skip dipping or use white chocolate as an alternative.
  • Allow cookies to cool properly for better texture and to avoid crumbling.
  • Storing cookies in an airtight container keeps them fresh for several days.
